Planning Thanksgiving So You Don't Make Yourself Crazy

If you are hosting the meal, Thanksgiving is the best of times and the worst of times.

For my mother, Thanksgiving was the best holiday of the year and I agree with her whole heartedly.
Thanksgiving gives us time to pause and enjoy our family and friends.

But hosting the meal can seem daunting. So many details to take care of, so much food to get on the table and so much to clean up.

How do restaurants and caterers deal with the stress of putting on big events?

They plan out every detail so there are no surprises.

The Guest List


Start with the guest list. Most importantly you'll need to know how many people are coming. That will tell you how many chairs you'll need and how big the dinning room table has to be.

These days, many people have dietary restrictions, so it is good to know that as well. Along with the invitation, ask if there are ingredients or foods your guests need to avoid.

If you expect a lot of children, decide where you want them to play and organize that space as carefully as the dinning room.

Recipes


Write up the menu.

If friends and family want to contribute to the meal, work out who will bring what. Give people assignments so you don't end up with three platters of green beans and no pumpkin pie.

Organize your recipes and do the math. Most recipes are written for 4 servings. Given the number of your guests, make the appropriate multiplication.

Go through the ingredient lists for all dishes and write up a master ingredients list. For example, if the stuffing recipe calls for 1 cup of mushrooms and the gravy recipe needs 1/2 cup of mushrooms, you know you need a total of 1 1/2 cups of mushrooms for the meal. Put that on your ingredients list.

Once you have a master list, divide up which ingredients you want to buy at farmers markets, specialty stores (like bakeries and cheese shops) and the supermarket.

We rely on farmers markets for fresh produce. In our neighborhood, four days from Thanksgiving, we'll shop at the Sunday Palisades farmers market for produce that can last most of a week: root vegetables like beets from Underwood Farm or yams and sweet potatoes from Yang Farms and G Farms for pluots and oranges.

For us, the Wednesday Santa Monica farmers market is a good place to pick up leafy greens, berries and fresh fruit. Any farmers market the day before Thanksgiving is going to be crowded, so get there early before the crowds.

If you want a specialty turkey (organic, kosher, heritage), it would be good to order your bird now from your local butcher or supermarket.


Time Line


Just about as important as settling on the menu is understanding what needs to be done and when.
Put into your time line details like when you will clean the house, wash and dry the tablecloth, check and clean all the dishes, silverware and glasses you want to use and, if you don't have enough, when you will pick up what you need to borrow from a friend.

Do you have enough chairs? If not, when you will pick up extra ones and from where.

Also indicate when you will pick up flowers and the turkey.

If you are ordering a cake from a local baker or a ready-to-serve dinner, put that into your time line, and check when they open and close. You wouldn't want your guests to miss enjoying your turkey because you arrived after the store was closed.

To figure out the time line for your menu, sit down at the dining room table with a pad of paper, a pen and a glass of wine or cup of tea and organize the dishes in terms of preparation and cooking time.

Some dishes can be prepped or made the day before. For instance, we always serve a roasted beet salad that we make on Wednesday. We also wash, dry and wrap in aluminum foil the sweet potatoes and baked potatoes that we will cook Thursday.

If you are buying a ready-to-serve meal, you still have to allow time to reheat the dinner. If you are cooking the entire meal, which we love doing even if it makes the day crazy-hectic, you need to account for every minute of the day.

Our kitchen is the size of a New York closet, which I like because I don't have to move much when I want to go from the sink to the stove, but when there are two or more people in that small space, it can get kind of hectic.

In our small kitchen, we have a Wolf stove. I love the six burners, which helps big time on Thanksgiving but because there is only one oven, we have to strategize when to bake our pies since the turkey will monopolize the oven for most of the day.

Planning out the day in as detailed as possible, helps keep the craziness manageable and fun.

We write up a schedule for the day that looks something like this:

6:00am wash and prep the turkey
6:15am saute onions, Italian sausage, shiitake mushrooms, parsley and garlic for the stuffing
6:30am preheat the oven to 350F degrees
7:00am put the turkey in the oven
7:30am make the cranberry sauce

And so on, going hour by hour, we backtime each dish so we know when it has to be cooked so it will be on the table at 3:00pm when we want to serve dinner.


Clean up

Don't forget to preplan clean up.

Work out who will be doing clean up during the meal. As courses are finished, serving platters and plates need to be cleared.
Since our house is small and the kitchen is open to the dining room, we clean as we go. After each course, we are joined by members of the dinner party who help bus the dishes and silverware into the kitchen. After they help clean up between courses, they reset the table with clean plates.

We have a tradition of taking a walk with our friends and family walk around the block after the entrees, before desserts are served. A selected few remain behind to clean up the dining room and kitchen so when everyone returns, desserts are on the table with fresh plates and silverware.

Having organized clean up as part of the meal, the kitchen is in good shape and we can enjoy dessert. With a little bit of planning, Thanksgiving is a lot more fun.

With Thanksgiving a few weeks away, my wife and I have started talking about the menu. Mostly we want to enjoy favorite dishes. One of those is a turkey liver pate I adapted from a chopped liver recipe my mom made when I was a kid.

Corn on the Cob Gets Dressed Up For Dinner

We celebrate summer with grilled meats and boiled corn, the golden ears arriving at the table, resting in silky pools of melted butter, ready for a dusting of freshly ground sea salt and black pepper.
Many people hunger so much for corn they eat it every chance they can to such an extent that, sooner or later, familiarity breeds disinterest and even a little disdain. 

Where it seemed so celebratory at the beginning of summer, by August they turn away when a platter of corn is placed on the table. 

That's pretty much the way it's been for me.

On my last trip to our local farmers market, I hadn't planned on buying corn until I noticed that very few farmers were selling corn and those that were had very little to sell. Arriving late, the corn was almost sold out. 

Talking with a farmer, I learned that local corn will disappear from the market in a couple of weeks. After that, no more corn until the spring.

I bought half a dozen ears, deciding we should have a farewell to corn dinner. Preparing the ears by grilling or boiling would still be great, but I wanted to do something different. 

At Cuban restaurants in New York, corn on the cob is served with butter, mayonnaise and grated cheese. The sweet chewy corn kernels benefit from those added flavors.

I liked the idea of a topping on the corn but decided on a different direction. 

Corn on the Cob with Garlic-Onion Crisps
Serves 4

Time 30 minutes

Ingredients

4 ears corn, husks and silks removed, washed and dried
1 tablespoon sweet butter
1 tablespoon olive oil
1 medium yellow onion, ends and skin removed, finely sliced
2 garlic cloves, skins removed, finely chopped
1/4 cup Italian parsley, leaves only, left whole or finely chopped
Sea salt and pepper

Directions
The corn can either be grilled or boiled. To grill, lightly drizzle each ear with a small amount of olive oil and season with sea salt and pepper. Place on a hot grill and turn frequently until lightly browned.  If boiled, place the ears of corn in a large pot of water, turn the heat on high, turn the corn frequently and remove when the water boils. Keep warm.

Heat the butter and olive oil in a frying pan. On a medium high flame, sauté the onions, garlic and parsley until lightly browned and crispy.

Cut the corn into 2" long sections, place on a serving platter. Sprinkle the onion-garlic-parsley crisps over the corn and serve.

Variations

Add heat to the sauté with 1/4 teaspoon cayenne powder.

After topping the corn with the sauté, dust the corn with freshly grated Parmesan cheese.

For an Armenian Feast, Try Adana Restaurant in Glendale

One of my favorite restaurants isn't close to where we live.
Adana is forty-five minutes away in Glendale.
The light and airy dining room suggests a banquet hall in an elegant European boutique hotel. There are white tablecloths on all the tables, pastel landscape murals on the walls and delicate wrought iron framing the windows facing busy San Fernando Road. 
I would enjoy the food at Adana at any price, but with large entrees costing from $10.50 to $17.95, there's a special pleasure in being served an affordable, well-prepared meal. 
Even though there are 15 kababs on the menu, I mostly stick with the dark meat chicken kabob, the lamb chops and baby back ribs. A friend who joins me on the trek likes the lamb chops kabob. They are all delicious.
Waiting for our entrees, we have an Armenian coffee, share a large plate of tabouli and catch up about family, work and movies.
Serge, the waiter, or Edward Khechemyan, the owner and chef, brings a basket of lavash or pita (I prefer lavash) and a dish of sweet butter.
We eat the tabouli and lavash with relish. The freshly chopped Italian parsley, tossed with bits of tomato, scallions, olive oil and lemon juice, has a touch of heat. We talk as we eat and sip the strong coffee.
Armenia is sandwiched between Turkey and countries previously aligned with the Soviet Union. Their national dishes borrow from neighboring cuisines, with the strongest influence coming from the Middle East.
The dishes arrive beautifully platted.  The pieces of deboned chicken meat are lined up like pillows resting on a bed of rice. My buddy's lamb chops come with the same generous helping of rice as my grilled chicken. The lamb doesn't look like a kabob. The fat chops give off a fragrant, aromatic sweetness that is intoxicating.
We had both selected the same side dishes: homemade hummus and a brightly colored Persian salad of roughly chopped ripe tomatoes, red onions, Italian parsley and unpeeled Iranian cucumbers.
My friend attacks the lamb chops. Holding the bare bone in his hand, he alternates bites of succulent, sweet meat with fork fulls of rice flavored with scoops of humus and the tomato-cucumber salad.
I eat with more deliberation, savoring each bite by spreading butter and hummus on a piece of lavash, adding a spoonfull of rice, Persian salad and slices of the moist, dark chicken meat to create a bite sized packet of aromatic flavors and complimentary textures. I construct the next packet—and the next—until I have eaten every last piece of chicken and grain of rice.
Working in a closet-sized kitchen, Khechemyan could cut corners but won't. Even though the prices are little more than you would pay at a fast food restaurant, the food is prepared-to-order using the freshest ingredients. He insists on working with quality food and the proof is in each bite. Khechemyan and his fellow chef, Sonik Nazaryan, are masters of layering flavors.
For a small restaurant, the menu has a good variety of dishes, including familiar American classics, including Philly cheese steak sandwiches, hamburgers and chicken breast sandwiches to name a few. Adana also offers many salads, thick, spicy lentil and barley soups and traditional Armenian stews. Finally, there are many popular Middle Eastern appetizers such as domeh, hummus, yogurt and cucumber dip. 
The combination of textues and flavors is such a pleasure. Any foodie in search of umami has to make the trek to Adana. That's what's at work here. All your taste buds are in play—salty, sour, sweet and bitter. 


My friend and I finish our meal with a second cup of Armenian coffee. We are completely satisfied and happy. Even though Adana is far from home, I go back as often as I can. It's that good.

Spicy Sweet Ginger-Garlic Chicken Wings

Being creative in cooking sometimes means breaking the rules or borrowing a sauce from a traditional dish and using it in a non-traditional way.
When a diner is served the popular Vietnamese soup called pho, a basket of fresh green vegetables and bean sprouts accompanies a giant soup bowl filled to the brim with meat and noodles. For seasoning, a dipping sauce is also provided.
In a flash of inspiration, I realized the dipping sauce would make a delicious marinade for chicken. For Zesterdaily I wrote a recipe for Pho Buffalo Wings that gives the tender wings a beautiful glaze, flavored with ginger-heat and sweetness.

Delicious Authentic Mexican Dishes at La Sandia in Santa Monica Place


To celebrate Mexican Independence Day (September 16), through the weekend La Sandia will serve Ponche, a traditional Independence Day punch, and the rich and spicy Chile en Nogada, a poblano pepper stuffed with pork in a walnut cream sauce.

La Sandia Mexican Kitchen and Tequila Bar shares the top floor of Santa Monica Place with half a dozen other restaurants, the Food Court and the Market.

You'll recognize La Sandia by the crowded patio and open air bar, offering over 200 tequillas, half a dozen margaritas and Mexican beers, Mojitos, Capirinhas and Sangria pitchers.
The front part of the restaurant is dominated by the busy bar scene, especially at Happy Hour. With generously extended hours Sunday-Thursday from 4:00pm-9:00pm and Friday 4:00pm-7:00pm, Happy Hour appetizers are $3.00 (shrimp ceviche, a choice of quesadillitas, tacos, empanadas and sliders, chicken wings and bbq pork ribs), margaritas $5.00, Mexican bottled beer $3.00, daily specials Mondays-Thursdays and $5.00, "bottomless" bowls of guacamole.
Walk past the bar and you enter the restaurant with a dining room in a plaza style expanse, dominated by a retractable ceiling, a large fountain with four, smiling cherubs and upholstered booths with plush seating.
On a recent weekday visit, the bar area and patio were packed with young professionals. The booths and tables in the restaurant were filled with a mix of couples, families with small children and groups of friends relaxing, eating and drinking.

The food is well-plated, with good sized portions. All the sauces, flour and corn tortillas and salsas are made fresh daily.
Featured dishes like the molcajete tacos for two ($23.95), could easily feed four as part of a family style meal that included the guacamole prepared tableside ($10.95/$18/95), an appetizer like the mushroom huraches ($9.95), one of the rich and deeply satisfying soups (tortilla soup/$7.95 and roasted corn/$8.95), another entree like the iron skillet shrimp fajitas ($17.95) and a sampling of the desserts, which include affordable portions ($2.95) of flan, tres leches cake, sorbets and a banana empanada with vanilla bean ice cream.
The moderately priced food is hearty, well-seasoned and fresh-tasting with a homemade quality. Nicely, La Sandia feels festive without being loud.

The molcajete is used in the presentation of many featured dishes.
Traditionally made from volcanic stone, the three-legged bowl is used in preparing the guacamole at the table. Whole avocados are mashed together with onions, fresh tomatoes, cilantro, serano peppers for heat, sea salt and lime juice. Guacamole can be good but at La Sandia it is great, with the perfect balance of salty, creamy, crunchy (those delicious raw onions) and heat. Eaten on the freshly made tortilla chips and all you're missing is an ice cold cerveza or a salt-rimmed margarita.

Attention to details is a standard of good cooking.
The molcajete tacos for two exemplifies that perfectly. Also served in a molcajete. This time the stone bowl has been heated in the oven so the sauce surrounding the cubes of grilled skirt steak bubbles and pops, releasing waves of savory sweetness into the air. Topping the dish are the quartered pieces of a whole tomato, two plump brown mushrooms and a packet of charred scallions. A raft of beef cubes appear to float on the surface.

Looking at the dish you assume the word "tacos" in the menu description is a mistake. There is a container of freshly prepared flour and corn tortillas next to the molcajete but surely this is a hearty stew not a "taco."

But you would be wrong. The molcajete contains the taco filling. Possibly the most elaborately constructed "filling" I had ever seen.

To finish the dish, you will ask your waiter for more flour and corn tortillas....many more. Dig deep into the stone bowl to discover its hidden, secret wonder: molten hot fundido cheese.

Tear a tortilla into quarters, put a spoonful each of the Spanish rice and charro beans (black beans simmered with chorizo and onions), a fork-full of caramelized steak coated in liquid cheese, add a piece of charred scallion, a tasting of the roasted tomato and green chile salsas and pop the tasty packet in your mouth.

As your mouth enjoys all those flavors and textures, your eyes close and you begin to mumble. Your friends at the table will wonder what you are muttering about. If they could hear you clearly, they would understand you are saying, "Oh my god that is wonderful."

When the plate of chile en nogada, the holiday dish, appears on the table, everyone will lean forward to inhale the wealth of aromas rising from the poblano pepper, split open to reveal the crumble of sauteed pork. One bite and your eyes close again and if you are all sharing bites together, all eyes will be closed and mouths will be moving as if speaking through sealed lips. A passing waiter will wonder if this is a group seance.
The walnut sauce makes the dish. Warm, creamy, full of flavors that are nutty and yet so much more, the sauce perfectly ties together the muskiness of the poblano with the sweetness of the pork. Adding the pomegranate seeds is a delightful finish. The acidic crunch cuts diagonally across the richness of the sauce.

Chef-owner, Richard Sandoval generously shared his recipe for Chile en Nogada so even after Mexican Independence Day, you can continue to enjoy this delicious dish at home.

CHILE EN NOGADA


Serves 6


Ingredients for the sauce


1 tablespoon shelled walnut pieces
1/4 cup almonds, blanched
3/4 cup whole milk
1/2 cup sour cream
1 cup goat cheese
3/4 teaspoon each granulated sugar, salt and black pepper, to taste

Directions


Place the ingredients in a blender and pulse until smooth. Set aside covered and refrigerated until ready to use.

Ingredients for the filling


1 3/4 pounds combination of shiitake, button and portobello or crimini fresh mushrooms, cleaned, de-stemmed and sliced
1 1/2 tablespoons olive oil
1/2 medium white onion, peeled and finely chopped
1 clove garlic, peeled and finely chopped
1 pound fresh tomatoes, peeled and finely chopped
1 tablespoon almonds, blanched and finely chopped
2 tablespoons golden raisins
2 medium apples peeled, cored and chopped
1 medium ripe pear, peeled, de-seeded and finely chopped
1 medium ripe peach, peeled, pitted and finely chopped
1 tablespoon of oloroso sherry
1/4 teaspoon ground clove
1/4 teaspoon ground cinnamon
1 1/2 teaspoons light brown sugar
1 1/2 teaspoons kosher salt
1 1/2 teaspoons freshly ground black pepper
1 pound ground pork picadillo

Directions


In a large frying pan, heat the oil to medium high and sauté the onion until translucent; add the mushrooms until golden on all sides. Add the rest of the ingredients and continue to cook until all ingredients are heated thoroughly.

Cool enough to handle easily.

Directions for final assembly


6 poblano chiles, roasted and peeled, stems kept attached
1 fresh small pomegranate, seeded
1 1/2 teaspoons chopped fresh flat-leaf parsley for garnish

Make a slit in each roasted poblano chile from the stem to the tip. Remove the seeds and placenta carefully and divide the filling equally to stuff the chiles. If not serving immediately, chill in the refrigerator, covered, for up to a few hours before heating.

Before serving, cover and heat through in a 300 degree oven for a few minutes or under the broiler until hot. When ready to serve, spoon the sauce over the stuffed chiles and garnish with pomegranate seeds and chopped parsley.

Gnocchi and Summer's Best Produce

Walk through any farmers market and the bounty of summer will be on display in mounds of freshly picked carrots, beets, lettuce, broccoli, cucumbers, peppers, onions, parsley, zucchini, corn, celery, green beans, tomatoes and spinach.
Nearby there will be baskets of fat figs ready to burst, bright pink peaches, sharply colored pluots and plums, nectarines the size of soft balls and clusters of black, green and red grapes, seedless and seeded.
How great is all that wonderful food! Now, what to do with it? That's the challenge.

It's hot outside, so who wants to cook? You've grilled all summer long and while you love grilled vegetables, you need to take a break.

My suggestion is simple, make gnocchi.

If you've never made gnocchi, you're probably saying it's too difficult to make. Only Italian chefs can do that.  The truth is, gnocchi are easy to prepare.  And it doesn't take much time in the kitchen.

In Praise of Leftovers

I love to cook. I love to eat. I love to go out to restaurants and eat. 

Those are my primary directives, to borrow a Star Trek expression. I have a couple of others.
Waste nothing. Get good value out of whatever I buy.

Combining all those together means when I go to a restaurant I always bring home a doggie-bag so I always get a second (sometimes a third!) meal out of my restaurant meal. That saves money and I exercise my creativity transforming one chef's ideas into my own.

Portion control is another advantage. Because I know I am not going to eat everything on the plate, I save the calories for another day.

That probably sounds obsessive, compulsive or just nuts, but there you have it. Me in a nutshell.

A 30 Minute Pasta with Sautéed Farmers Market Vegetables

At the height of summer, the farmers markets have the most amazing selection of fresh fruits and vegetables.

Corn, tomatoes, carrots, beets, eggplant, zucchini, peas, broccoli, parsley, arugula, frisee, plums, pluots, figs, peaches, nectarines, apples, grapes...I'm running out of breath trying to say them all.
Part of me wants to spend the whole day in the kitchen experimenting and playing with all these great ingredients.

The other part would prefer to stay outside, enjoying our beautiful Southern California weather. This recipe splits the difference. I can have fun with the farmers market bounty and it takes only 30 minutes.

That's a win-win if ever there was one.

Sautéed Vegetables and Pasta

For vegetarians, this is a very satisfying meal-in-one. For everyone else, cooked meat, poultry and seafood can easily be added with great results.
I choose to cut all the vegetables so they are similar in size to the corn kernels, although I make an exception for the string beans, which I think are more enjoyable when cooked in lengths of at least 1". A personal preference.  At any rate, cut the vegetables small or roughly, depending on how you like them.

Yield: 4

Time: 30 minutes

Ingredients
1 pound pasta
1 ear of corn, kernels removed
1 carrot, washed, peeled, finely chopped
1/2 pound string beans, washed, ends removed, cut into 1" lengths
1 small yellow onion, peeled, ends removed, finely chopped
1/2 cup Italian parsley, leaves only, finely chopped
2 garlic cloves, peeled, finely chopped
2 tablespoons olive oil
2 tablespoons sweet butter
1 teaspoon kosher salt
Sea salt and pepper to taste

Method

Bring to a boil a gallon of water with the kosher salt. Add the pasta and stir well initially and every couple of minutes to prevent sticking. Cook until al dente, about 10 minutes. Place a heatproof cup in the sink and capture one cup pasta water when you drain the pasta.

Return the cooked pasta to the pot. Toss the pasta with 1 tablespoon each of olive oil and sweet butter. Season with sea salt and pepper. Lightly cover--do not seal--with a sheet of aluminum foil to keep warm.

In a large frying or chefs pan, heat 1 tablespoon olive oil. Sauté all the vegetables until brown. Add 1 tablespoon sweet butter and 1/2 cup pasta water. Simmer over a medium flame until the liquid is reduced by half. Add the cooked pasta. Toss well to coat. If more liquid is needed, add more of the remaining pasta water and a pat of butter. Taste and adjust seasoning with sea salt and pepper.

Serve with freshly grated Parmesan or Romano cheese.

Variations

Instead of Italian parsley, add 1 tablespoon fresh oregano.

For heat, add 1/4 teaspoon cayenne to the vegetable sauté.

Along with the pasta water and sweet butter, add 2 cups of any chopped, cooked meat, poultry or seafood you like.

Add roasted, skinless, chopped tomatoes with the pasta water and sweet butter.

Add 1 cup raw, chopped tomatoes with the vegetables.

Along with the freshly grated cheese, add 1/4 cup toasted pine nuts or roughly chopped almonds.

Along with the freshly grated cheese, add 1/4 cup toasted or sautéed bread crumbs.

One Year Old, Santa Monica Place Celebrates with a Restaurant Tasting


The newly remodeled Santa Monica Place has hit its one-year anniversary. As part of the celebration, eight of the mall restaurants are offering tasting menus for lunch and dinner until Aug. 14.
For anyone who hasn't yet visited the remodeled Santa Monica Place, you are in for a surprise. The old school, enclosed big-box mall has had a remarkable make-over.
The top of the old mall was literally peeled off, creating a three-story, open courtyard. On the top floor, a Dining Deck with fast-food restaurants has seating both indoors and outdoors with views of the ocean—provided you stand on tippy-toes and peek above the building to the west.
In the afternoon, cool ocean breezes add to the pleasures of being on the deck. If you happen to visit at the end of the day, you can watch the sun set as you enjoy your plate of fish tacos from Pinches Tacos or Charlie Kabob's rotisserie chicken with humus and rice.
In additon to the Dining Deck, the rennovated mall has ten sit-down restaurants offering a great variety of cuisines.
As part of the anniversary celebration, most of the full-service restaurants on the top deck and in the Market are offering tasting menus for lunch ($20) and dinner ($30) through Sunday, Aug. 14.
Personally, I love tastings. At a reduced price, a selection of dishes from the menu are offered as a way of introducing diners to the restaurant.

Yabu in West Los Angeles - Authentic Japanese

Living in Southern California, we enjoy rich ethnic diversity. Those of us who explore culture through cuisine are very happy about that.
Located in West Los Angeles, a good example of a neighborhood Japanese restaurant, Yabu (11820 W. Pico Blvd., Los Angeles, CA 90064; 310-473-9757has a devoted following.
Because Yabu has a much larger, sister restaurant in West Hollywood, when you call to make a reservation, you will be asked to confirm that you want to eat at the Pico restaurant.
You do.
There are lots of chain restaurants with Japanese names, but Yabu is the real deal. The kitchen prepares authentic Japanese comfort food, not unlike what you would eat in Tokyo or Kyoto.
Serving lunch (Mon.-Sat.) and dinner (Mon.-Sun.), the restaurant is perfect to drop in for a quick bite at the sushi bar or with family and friends to hang out at one of the tables tucked into the corners of the room.
Order cups of hot green tea, ice cold bottles of Japanese beers or hot (or cold) sake and try out new dishes as you enjoy easy conversation and good food.
The sushi selections are always fresh and made with precision. Affordable—unless you go crazy—sushi and sashimi can be ordered individually or as combination platters.
The beef tataki, a Japanese version of carpaccio, and the albacore tuna tataki are especially tasty (our son Franklin's favorites). The ponzu dressing is spicy enough to bring out the best of both.
In no particular order, here are some of the dishes we order whenever we visit: fried tofu, stir-fried lotus root (kimpira renkon), edamame, ten don (tempura shrimp and vegetables over seasoned steamed rice), eggplant, spinach in a miso sauce, miso soup, shishito green peppers, black cod and soboro don (finely minced chicken cooked in a ginger soy sauce with a bit of heat and served over donburi rice).
Come at lunchtime and try the combination of noodle soup (soba or udon) and sushi. Affordable and freshly made, the soup is light and flavorful, the noodles chewy and delicious. 
One of my favorites is the tempura udon. Inside the large bowl of soup are chewy udon noodles, slices of fish cake, vegetables and tempura. Ask for the vegetable and shrimp tempura on the side so they stay crisp and crunchy.
Yabu's tempura may be some of the best in Los Angeles. Light and fresh tasting, the shrimp, seaweed square, lotus root and sweet potato have their flavors enhanced, not overwhelmed, by the batter.
Everyone has his or her favorite sushi; mine are tamago (egg), baked crab in a hand roll (on the dinner specials menu) and spicy tuna.
For a small restaurant with a kitchen about the size of a Mini Cooper, you'll be surprised at the plentiful menu.

Summer's Perfect Dessert: Vanilla Rice Custard with Raisins

Because our house and backyard are shaded by three large trees, we make it through summer's hottest days without air conditioning. It helps that a cooling ocean breeze comes our way in the afternoon.

Eating outside on the deck is a great way to beat the heat. Easy-to-make dishes, relying heavily on salads and grilled vegetables, fish and meat are the way to go. No need to suffer inside in front of the stove when there's a barbecue outside.

Shopping at our local farmers markets--Pacific Palisades on Sundays and Santa Monica on Wednesdays--keeps us happy, with freshly picked fruits and vegetables.
Carrots full of sweetness and crunch, cherry tomatoes that dive bomb your mouth with sweet-acidic juice, flat and spicy leaves of arugula tossed in salads dressed simply with a reduced balsamic vinaigrette dressing, split lobsters on the grill topped with caramelized onions, bread crumbs and butter, Italian sausages poked with a fork to release the steaming juices as they grill on the barbecue....
Sooner or later, the meal comes to an end but before that happens, a closer needs to make an appearance.

Dessert.

The simpler the better, in my mind. Summer is no time for heavy confections. Perfectly ripe grapes or peaches and nectarines bursting with flavor. Figs so sweet you imagine wasps can sense their sweetness from miles around. Grilled fruit. Ice cold melons. Simple sorbets.

For a dinner last week, I prepared an easy-to-make vanilla custard with raisins. For variety I used both regular and golden raisins with a few dried cranberries thrown in.
Serve the custard at room temperature or slightly warmed (250 degrees for 10 minutes).

For a festive addition, try serving the custard with a variety of toppings: bowls of heavy cream, ice cream, whipped cream (there's a theme here) and fresh berries--whichever ones are ripe and sweet--blueberries, strawberries, raspberries or blackberries.

Vanilla Rice Custard with Raisins

Yield: 6

Preparation Time: 15 minutes

Cooking Time: 45-60 minutes

Ingredients

2 eggs
1/2 cup white sugar
1 cup cream
2 tablespoons raisins
1/2 teaspoon vanilla
2 cups cooked rice
2 tablespoons raw whole almonds

Method

Preheat the oven to 350 degrees.

Put the almonds on a baking sheet and roast in the oven for 15 minutes.  Remove, let cool and roughly chop. Set aside.

Beat together the eggs and sugar until well-blended. Add the raisins, cream and vanilla. Let the raisins soak in the custard for an hour or overnight.

Use any kind of rice you like. Add the rice and chopped almonds to the custard-raisin mixture. Pour into an oven proof bowl.

I like to use a shallow baking dish so there is more of the delicious crust that forms around the edge of the dish.  The shallower baking dish, the shorter the cooking time. And, conversely, the deeper the baking dish, the longer the cooking time.

Create a water bath by putting 1" of water into a baking dish 4" larger than the baking dish you are using the for the custard. Put the baking dish into the water bath and into the oven.

Cook until the custard sets or doesn't jiggle if the baking dish is shaken.

Rotate every 30 minutes for even cooking. If the top of the custard is getting too brown before setting, gently lay a sheet of aluminum foil over the top.

Serve with ice cream, whipped cream or fresh fruit.

Variations

Instead of one kind of raisin, use golden as well as dark raisins.

Instead of all raisins, use dried cranberries or any other dried fruit, roughly chopped.

Instead of almonds, use whatever roasted nuts you prefer.

Add a touch of cayenne powder for a hint of heat.
