Valentine's Day

Since my wife has sworn off sugar, my Valentine's day options are limited. I used to bake her one of her favorite desserts--a chocolate banana walnut cake, bread pudding with chocolate and almonds, apple pie with crystallized ginger crust, or a raspberry custard--but not now.

Last year, the first year of Michelle's new regimen, I didn't know what to do so I ironed all her blouses. She liked that.

This year we decided our Valentine's Day treat would be a meal at our favorite restaurant. Last week we went to a tasting at the Il Fornaio (1551 Ocean Blvd, Santa Monica, CA 90401; 310/451-7800) opposite the Santa Monica pier. This month's Regionale features the exceptional cuisine of Lazio, which includes Rome.

We enjoyed the meal so much, we're going back for Valentine's Day, the last day of the Regionale.

Romans must love pork, because cured pork was a featured ingredient in a soup, two pastas, and an entree. Guanciale (pork cheek) enhanced the flavors of the Cannellini Bean Soup (Pasta e Fagiolicon le Cotiche) and gave depth to the Spaghetti in SpicyTomato Sauce (Bucatini all'Amatriciana).

Pancetta in the Spinach Cannelloni (Cannelloni alla Crema) contributed a salty heartiness to the chicken and veal stuffing. In the Sauteed Veal (Saltimbocca alla Romana), prosciutto combined perfectly with the sage and wine reduction to compliment the thin slices of veal.

But Romans apparently do not live by meat alone. The vegetarian and seafood dishes were particularly satisfying, especially one dish, the Grilled Hearts of Romaine(Lattuga Romana alla Griglia). Once in a while we encounter a dish that surprises, even though the ingredients are totally familiar. That was definitely the case with the grilled romaine. Served warm and topped with Il Fornaio's creamy house dressing and a thin slice of softened pecorino pepato (whole peppercorns are imbeded in the cheese), the lightly caramelized romaine had more similarities to fennel than it did to the overly familiar lettuce we have in salads.

The Whole Wheat Ravioli (Mezzelune Integrali) was also unexpectedly good. Too many times we've tried to eat healthily and ordered a whole wheat pasta only to be disappointed with textures and flavors that resembled cardboard. Not so the ravioli filled with greens (Swiss chard and Spinach) and cheeses (ricotta and pecorino) and topped with mushrooms and cherry tomatoes.

Even though Michelle wouldn't have dessert, she indulged me and watched as I ate the Kahlua and Coffee Mouse (Crema al Caffe' e Sambuca). The dessert was presented with extra long spoons which struck me as an affectation, at least until I started eating and discovered that buried in the delicious mouse were precious treats. Cubes of sambuca-soaked sponge cake and coffee beans coated in dark chocolate were lying in wait to be discovered by the deep-diving, adventurous spoon-wielding-diner.

With so many wonderful dishes and several we wanted to try like the Roasted Salmon with Asparagus, Artichokes, and Capers (Salmone Ostia Antica) and the Risotto with Prawns and Monkfish (Risotto Antico Impero), we decided the best way to celebrate our love for each other was to come back to Il Fornaio and do it all again.

Throwing a (Birthday) Party on Super Bowl Sunday: Bacon Wrapped Shrimp, Carrot Salad, Caesar Salad, Ribs, Wings, and Chocolate Banana Cake

My birthday isn't on Super Bowl Sunday, but it's close enough that every year I double-down and celebrate my birthday and football on the same day.

I didn't much care about the sport until our youngest son, Michael, taught me to love all things football. From the time he was 3 years old, he watched Sports Center and would grill me about which QB was the best--I didn't have a clue. He's off at UC Davis now and all that's different now. These days, my favorite TV show--with the exception of The Daily Show and The Colbert Report--is Showtime's Inside the NFL.

We've invited a dozen friends to come by the house and watch the game. I don't want to get stuck in the kitchen, so everything we're serving will be made the day ahead.

Only the Bacon Wrapped Shrimp appetizer has to be grilled on the day so the bacon is crisp and the shrimps are juicy. Just before kick-off, we'll reheat the wings and ribs and we'll be ready to watch what promises to be a great match up.

Bacon Wrapped Shrimp

You know the expression, "Bet you can't eat just one," well it applies to this appetizer. My son Franklin mastered this recipe when he was putting on feasts to entertain his college roommates. He taught me and I'm happy to pass it along to you.

Yield: 4 servings

Time: 30 minutes

Ingredients

1 pound shrimps (25-35 count/pound), washed, shelled, deveined
10-12 bacon strips
2 tablespoons olive oil
1/4 teaspoon sea salt
1/8 teaspoon freshly ground black pepper
1 garlic clove, peeled, finely chopped
1 shallot, peeled, finely chopped
2 tablespoons Italian parsley, washed, finely chopped
Toothpicks


Method

Heat the olive oil in a pan and season with sea salt and freshly ground black pepper. Sauté the finely chopped parsley, garlic, and shallot in the olive oil until lightly browned. Let cool. Spoon the seasoned olive oil over the shrimp. Toss well and let marinate for 30 minutes.

Organize an area on the counter so you can work assembly-line style.

Cut the strips of bacon into 3 equal pieces. Toss the shrimp again, then take one shrimp and lay it on the piece of bacon, rolling the bacon around the shrimp. Take a toothpick and push it through the bacon-shrimp-bacon to hold it together. Set aside and do the rest.

Using tongs, put the shrimp on a hot grill and close the hood. If you're using an oven, set it at 450 degrees and put the shrimp on a wire rack over a cookie sheet. Turn every 2-3 minutes so they cook evenly and don't burn, about 10 minutes.

Serve on a platter with napkins.

Carrot Salad with Lemon-Soaked Raisins

A great accompaniment for the ribs and wings, the salad also goes well with deli meats like turkey breast or ham or grilled steaks, chicken, or sausage. The lemon-pepper soaked raisins and the roasted nuts bring some surprises to a familiar side dish.

Yield 6-8 servings

Time 20 minutes

Ingredients

8 large carrots, preferably farmers' market fresh, washed, peeled, ends trimmed off
1 scallion, optional, finely chopped
1 small bunch Italian parsley, washed, dried, stems trimmed, finely chopped
2 tablespoons golden raisins
2 tablespoons lemon juice
1/2 teaspoon cumin
Pinch of cayenne
Sea salt and pepper
1/2 cup mayonnaise

Method

Soak the raisins in lemon juice and 1/4 teaspoon black pepper at least 30 minutes, preferably overnight Grate the carrots in a large mixing bowl. Roughly chop the raisins, reserving the lemon juice not absorbed into the raisins.

Mix together the carrots, raisins, parsley, and scallions. Season with the cumin, cayenne, sea salt, and black pepper and toss. Add the lemon juice and mayonnaise. Mix well.

Variations

Use cilantro instead of Italian parsley

Add 2 tablespoons capers

Top with 2 tablespoons roasted chopped almonds

Caesar Salad

The dressing can be made ahead and refrigerated for up to 2 days, then all you have to do before serving is tear up the lettuce, shake on some cheese, add the croutons and pour on the dressing. Perfect for a half-time snack.

Yield 4 servings

Time 30 minutes

Ingredients

1 garlic clove, skin off
1/4 teaspoon sea salt
4 anchovies
1 large egg, farmers' market fresh
1/4 teaspoon Worcester sauce
2 hearts of romaine or 1 large frisee, leaves washed
2-3 tablespoons olive oil, to taste
1 teaspoon lemon juice, freshly squeezed
2-3 drops Tabasco, optional
1/2 teaspoon Dijon mustard, optional
1/4 cup Parmesan or Romano cheese, freshly grated
1/2 cup croutons, homemade
Black pepper

Method

Use a wooden bowl if you have one. Sprinkle the sea salt on a wooden cutting board. Mash the garlic back and forth on the salt with the flat side of a chef's knife, then sweep the garlic-salt mash into the salad bowl.

Boil water in a small saucepan. Add the egg and cook for 4 minutes. Remove the egg, let cool, open, scoop out the yolk and white with a small spoon, and add to the salad bowl along with the Worcester sauce, optional Tabasco & Dijon, olive oil, and lemon juice.

Using a fork, mash the anchovies against the side of the salad bowl so they dissolve in the dressing. Mix well.

Tear the romaine leaves into pieces or chop up the frisee, add to the salad bowl, top with grated cheese, croutons, and season with pepper. Toss to coat the leaves.

Taste and adjust the flavors by adding more lemon juice or sea salt.

Variations

Add 1/2 pound grilled, shelled, deveined shrimp, whole or roughly chopped

Add 2 chicken breasts, skinless, grilled, thin sliced

Add 1 ripe avocado, peeled, pitted, roughly chopped

Brown Sugar Pork Ribs

The cooked ribs can be kept in the refrigerator covered 2-3 days or frozen in an air-tight freezer bag.

Yield 4 servings

Time Prep (20 minutes) Marinate (overnight) Cook (2 hours)

Ingredients

1 rack pork ribs
2-3 cups brown sugar
1/4 cup kosher salt
1/2 teaspoon cayenne
Olive oil
Black pepper
6 ounces Italian tomato paste
1 small yellow onion, peeled, finely chopped
2 garlic cloves, peeled, finely chopped

Method

Trim excess fat, the membrane, and flap from the ribs. Caprial Pence the owner-chef of Caprial's Bistro in Portland, Oregon and a fellow contributor to Eat Drink or Die shows how to prep the ribs with easy-to-follow photographs. Reserve the flap, trimmed of its membrane, to grill for tacos.

Spread a piece of plastic wrap on the counter 5” longer than the rack. Dust the meat side of the ribs with the cayenne.

Mix together the brown sugar and kosher salt. Spread half the dry mix on the plastic wrap. Lay the ribs on top, then cover with the rest of the dry mix. Cover with a second piece of plastic wrap, seal, fold in half and place into a Ziploc or plastic bag. Refrigerate in a pan overnight.

In the morning remove the ribs. The dry mix will have transformed into a slurry. Very alchemical! In a sauce pan sauté the onions and garlic with olive oil until lightly browned, season with pepper. Remove the ribs from the plastic bag. Use a rubber spatula to remove most of the liquid from the ribs and plastic bag and transfer to the sauce pan. Add the tomato paste and simmer the sauce on a low flame for 20 minutes. Taste and adjust the flavor if necessary.

Line a large baking tray with tin foil. Place a wire rack on top of the baking tray, then lay the ribs on the rack. The ribs can either be cooked in a 350 degree oven or on the “cold” side of a covered grill with the heat on high.

Whether on the grill or in the oven, cook the ribs 30 minutes on each side, then baste the ribs with the sauce and cook another 30 minutes on each side or until done. Remove from the oven, cut apart the individual ribs, and serve.

Kimchi Chicken Wings

The natural partnership of kimchi and brown sugar brings a sweet-heat to these finger lickin' good wings.

Yield 4 servings

Time Marinate overnight. Cook approximately 60 minutes

Ingredients

2 1/2 pounds chicken wings, washed, pat dried
2 tablespoons brown sugar
1/2 cup kimchi, finely chopped
1 tablespoon kimchi water from the bottle
1 tablespoon olive oil
1 small onion, washed, peeled, sliced thin
2 tablespoons soy sauce

Method

Dissolve the brown sugar in the kimchi water, olive oil, and soy sauce. Add the kimchi, onion slices, and chicken wings. Mix well, cover, and refrigerate overnight.

Preheat the oven to 350 degrees. Line a baking tray with tin foil for easy clean up. Place a wire rack on the tray and arrange the wings on the rack. Drizzle the wings with olive oil. Put into the oven and bake 30 minutes. Turn over with tongs. Bake another 30 minutes.

The wings should be tender and golden brown. If not, turn the wings over and continue baking another 10 minutes.

Check again and continue baking at 10 minute intervals, turning the wings each time, until they are done.

In a small saucepan on a low flame, reduce the marinade by a third. Reserve.

The wings should be eaten hot. Pour the heated, reduced marinade over the wings just before serving.

Serve with plenty of napkins and ice cold drinks.

Variations

Add 1 tablespoon julienned garlic and 1/4 cup finely chopped Italian parsley to the marinade
Just before serving, top with 1 teaspoon toasted sesame seeds and 1 tablespoon thinly sliced scallion

Banana Cake with Chocolate Chips and Walnuts

Now it's time for something sweet. The cake is best served warm, topped with powdered sugar and grated dark chocolate. Ice cream and whipped cream are good too.

Yield 8-10 servings

Time 90 minutes

Ingredients

4 ripe bananas
1 1/2 tablespoons baking soda
1/4 teaspoon pure vanilla extract
2 eggs
1 cup plus 1 tablespoon sweet butter, room temperature
1 cup white sugar
1/2 cup brown sugar
2/3 cup half and half or 1 cup heavy cream
2 1/2 cups white flour
Pinch of sea salt
Pinch of cayenne
1/2 cup raw walnuts
1 cup semi-sweet chocolate chips

Method

Melt 1 tablespoon of butter and paint the inside of a 9 x 3 round cake pan, then put the pan in the freezer for 30 minutes. The frozen butter prevents the batter from sticking to the pan.

Bake the walnuts on a cookie sheet in a 350 degree oven for 30 minutes, turning every 10 minutes. Let cool, roughly chop, and set aside.

In a bowl mash the bananas with a fork, add the baking soda and vanilla. stir well and set aside. In a mixer use the whisk to cream together the softened butter and both sugars. Add the eggs, mashed bananas, half and half (or cream) and whisk until blended. Mix in the flour half a cup at a time, being careful not to over-beat.

Remove the bowl from the mixer. Use a rubber spatula to blend in the walnuts and chocolate chips. Pour the batter into the buttered cake pan. It will only fill the pan half-way, which is good because the cake will rise.

Bake the cake in a 350 degree oven for 60-70 minutes, turning the pan every 20 minutes so the cake cooks evenly. Test to see if the cake is done by inserting a wooden skewer. If the top is browning too quickly, lightly lay a sheet of aluminum foil over the top. When the skewer comes out clean, take the cake out of the oven and place on a wire rack for 30 minutes.

Remove the cake from the pan, putting it back on the wire rack to finish cooling.

Just before serving, dust the top with powdered sugar and shaved chocolate. Serve warm or at room temperature.

Mom’s Apple Pie Recipe with a Crystallized Ginger Crust

Besides making the turkey for Thanksgiving, my mom always made apple pie. Her recipe for the filling was classic in its simplicity: apples, brown sugar, lemon juice, and raisins. I’ve played around with her recipe but never improved it. The crust, however, was a different matter.

Over the years I tried dozens of recipes with varying results. When I finally settled on a recipe that worked there was still something missing. Sure I wanted the crust to be light and flaky with a buttery flavor and a little sweetness, all of which nicely framed the flavors of the apple filling but I still felt something was missing.

I wanted the crust to add to the flavors of the apple pie, not just frame them. That’s when I hit on using crystallized ginger to add sweet-heat to the crust.

Apple Pie with Crystallized Ginger Crust

You can use any tart apple or, as we prefer, one with more flavor like a Fuji.

Yield: 6-8 slices

Time: 90 minutes

Ingredients

6 large sized apples, washed, peeled, sliced 1/2” thick

2 tablespoons fresh lemon juice

3/4 cup brown sugar

1 tablespoon golden raisins

5 large pieces crystallized ginger

2 1/2 cups all-purpose flour

2 sticks unsalted butter, cut into small pieces

1/4 teaspoon sea salt

3 teaspoons raw sugar

2-3 tablespoons ice water

1 egg white

Method

Make the pastry first. Hand chop the crystallized ginger as fine as possible. Put the flour, butter, sea salt, 2 teaspoons of raw sugar, and the crystallized ginger into a food processor and pulse until well-blended. While the food processor is running, slowly add water until the dough forms a ball.

Sprinkle flour onto a cutting board. Remove the ball of dough, divide into two pieces, put onto the flour and flatten into two 6” disks. Wrap each disk separately in plastic wrap. Refrigerate for at least 60 minutes.

Prebake the bottom crust.

On the floured cutting board, remove one disk from the plastic wrap and roll out the dough so it covers a 9” pie dish. Gently lay the dough over the pie dish and press down to fit. Trim the excess dough off the edge with a sharp paring knife. Make a dozen holes in the bottom of the dough. Weigh down the dough with ceramic pastry balls, uncooked rice, or beans and bake 15 minutes in a preheated 375 degree oven. Remove. Let cool on a wire rack. Remove the weights.

For the filling, put the lemon juice, raisins, and brown sugar in a large mixing bowl. Toss the apple slices in the mixture so the apples don’t discolor. Using a rubber spatula put the slices and juice in the prebaked crust.

Roll out the top crust on the floured cutting board as before. Lay the pastry on top of the pie. Trim away the excess and press together the edges of the top and bottom crusts. Use a paring knife to make half a dozen slits in the top pastry to allow steam to escape.

Bake in a preheated 375 degree oven for 30 minutes. Remove from the oven. Lightly beat the egg white with 1/2 teaspoon of water. Brush the pastry with the egg white and sprinkle the remaining teaspoon of raw sugar over the top. Return to the oven for an additional 25-35 minutes or until the crust is nicely brown.

Serve warm with whipped cream or vanilla ice cream.

Bread Custard with Raisins and Dried Cranberries

Don't waste food. That's what my grandmother always told me. I took that simple idea to heart.

When we go out to eat, I bring home what we don't eat. Especially the bread. Why let good bread get thrown away? And if you're in the grocery store, and you see a loaf of marked-down white bread, buy it and you'll be able to make a dessert that's as easy-to-make as it is elegant looking and delicious.

Bread Custard with Raisins and Dried Cranberries

Unlike traditional bread puddings, this dessert is designed to come out of the pan.

Yield 4-6 servings

Time 30 minutes preparation, 60 minutes baking

Ingredients

2 eggs
1 cup heavy cream
1/2 cup + 1 teaspoon sugar
6 slices white bread
1 tablespoon dark raisins
1 tablespoon golden raisins
1 tablespoon dried cranberries
1 tablespoon whole raw almonds, roughly chopped
1 teaspoon sweet butter, melted

Method

Soak the raisins and cranberries in the cream for an hour or overnight.

Pre-heat the oven to 350. Toast the bread in the oven for 4-5 minutes on each side until lightly toasted. Set aside.

Heat 1 teaspoon of sugar in a nonstick skillet over a low flame. Add the chopped almonds. Stir frequently until sugar begins to melt. After the almonds have been coated with the melted sugar, remove from the pan and chop on a cutting board.

Make the custard-base by using a fork to beat together the eggs and sugar. Add the cream with the raisins and dried cranberries. Stir well.

Put water into a small bowl. Taking 2-3 slices of toasted bread at a time, dip the bread in the water for a few seconds. Carefully squeeze out the water and tear the bread into pieces and drop into the custard. Mix well.

Instead of using a standard baking pan, use a 9" round take-out container. Why? Because the thin, aluminum-sided take-out container is flexible and that makes removing the bread custard easy.

Paint the inside of the take-out container with melted butter. Pour in the custard-bread mixture. Put into a water bath (1" of water in a pan larger than the take-out container).

Bake for 30 minutes, remove from the oven. Sprinkle the caramelized chopped almonds on top of the custard. Loosely lay a piece of aluminum foil over the custard to prevent the top from burning before the custard is set

Return to the oven for another 15 - 30 minutes. The custard is done when you touch the top and it only slightly jiggles (shouldn't be "wet"). Then remove from the oven and let cool on a wire rack.

When cooled, the custard will shrink slightly allowing for easy removal from the pan. Place one hand on top, flip it over, and carefully remove the cake from the pan. Place a plate on the bottom and flip it over.

Serve warm dusted with powdered sugar or topped with whipped cream or ice cream.

A Light and Cool Summer Dessert: Raspberry Custard

My favorite cold weather desserts need to be sweet and full of flavor. When it's cold and rainy outside, nothing is better than a slice of flourless chocolate cake with a scoop of vanilla ice cream or a bowl of hot apple cobbler and a spoonful of heavy cream. Rich and sweet or hot and sweet, yumm.

In summer, heaviness is out of place. My preferred dessert is beautifully ripe fruit from our local farmers' market: a bowl of ripe berries, a slice of ice cold watermelon or cantaloupe, a ripe pluot, peach, or nectarine.

When I want a more elaborate dessert, I supplement fresh fruit with custard.

Custard is easy to make, requiring only grade-school math: 2 (eggs) + 1 (cup cream) + 1/2 (cup sugar). Poured in a buttered pan, baked in a water bath. In and out of a 350 degree oven in an hour. Simple, easy, and delicious.

Then I had a thought.

Why not separate the eggs and get a souffle-effect by beating the whites? With a bit of experimentation, I discovered the souffle needed more support, so I adjusted the proportions by adding a third egg. To lighten the flavor and lower the calories, instead of using all cream, I split the difference with a 50-50 mixture of cream and plain yogurt. If you can find Greek yogurt, all the better, for its sour-edge.

Just for the record, I tried using all yogurt and it wasn't creamy enough for my taste.

Cream and Yogurt Custard with Fresh Raspberries

Yield: 4-6 servings

Time: 15 minutes to prepare, 75 minutes to bake

Ingredients

3 eggs, separated
1/2 cup sugar
1/4 teaspoon vanilla
1/2 cup plain yogurt, preferably Greek
1/2 cup heavy cream
1 teaspoon grated lemon peel, finely chopped
1 basket raspberries, washed, dried
1 teaspoon sweet butter, melted

Method

With the melted butter, paint an 8" or 9" ovenproof bowl to prevent sticking. Put the whites into a mixer with 1 teaspoon of the sugar. Beat until the whites peak, 3-5 minutes. Set aside.

Beat together the yolks and the remaining sugar until well-blended. Add the vanilla, yogurt, cream, and lemon peel. Mix well. Carefully fold in the whites, then the fresh raspberries.

Pour into the ovenproof bowl, place into a water bath with 2" of water, put in a preheated 350 degree oven.

After 30 minutes, rotate the bowl for even cooking and place an aluminum foil tent over the top to prevent burning. Be sure that the "tent" peaks above the surface of the bowl, otherwise as the souffle top rises, it will stick to the foil.

You'll know the custard is set when rotating the bowl, the custard moves only a little bit. Remove from the oven and let cool.

For lunch, serve cold from the refrigerator. For dinner, it is better at room temperature. Dust with powdered sugar just before serving.

Variations

Instead of raspberries, use any berry.

Top with whipped cream instead of powdered sugar.

Top with a caramelized nut: chopped walnuts, almonds, hazelnuts

What's the Perfect Valentine's Day Gift?

That’s the question of the moment. Ads on TV, in newspapers, on line, in magazines, on billboards, buses, subways, just about everywhere you look, make suggestions about what to give your lover to show how much you treasure her: romantic dinners, cruises, hot air balloon rides, diamonds, earrings, pearl necklaces, chocolates, spa treatments, cakes, pies, tarts, sweaters, and of course, flowers.

Years ago when I lived in Rhode Island I had a friend who refused to buy any of her gifts. For Christmas or a birthday, she’d knit a gift, create a handmade card, or construct a collage. Risa was an enthusiastic practitioner of the hand-made movement because she felt that making a gift was a more emotional way of connecting to someone you cared about. To her, going into a store and plunking down a fist full of cash wasn’t as intimate and personal as making something.

I took Risa’s lesson to heart. Many Valentine’s Days I baked. Apple pies with crystallized ginger crusts. Flourless chocolate cakes with roasted almonds. And banana cakes with chocolate chips and roasted walnuts, one of my wife’s favorite desserts.

For this Valentine’s Day I was presented with a problem. I couldn’t bake Michelle a cake because she had sworn off dairy products and sugar. No matter how much she used to like my desserts, a beautiful cake wouldn’t tell her “I love you” the way it used to. So what could I make or do for her that would show her I love her?

To be valued, a gift has to be appropriate. Finding the right gift means that I really understand who Michelle is and what makes her happy. That’s when I realized the best gift I could give her was to iron all her blouses.

If you’re Jewish, which I am, you’ve been taught that true gift giving (a mitzvah) is only genuine if you ask for nothing in return, not even a thank you. If you “give to get”, that’s not genuine giving. Selflessness and gift giving go hand in hand.

When Michelle opened her closet yesterday, expecting to see dozens of clean but wrinkled blouses, she instead found all her blouses freshly ironed. I didn’t create a handmade card or bake a cake, but I did give her what made her feel loved and taken care of and that was a good Valentine’s Day present. My gift made her very happy.

A major figure in the world of English cuisine, Chef Albert Roux created two signature restaurants for Sofitel at their London St. James and Heathrow hotels. A chef of incredible energy--witness his involvement in many restaurant ventures--he is also a man of exceedingly good humor.

We were enjoying lunch at his Brasserie Roux at the London St. James Sofitel and I had the opportunity to be introduced to him. He was sharing with a friend a samplings of his cheese and dessert service. I explained that I was writing about the Sofitel for Peter Greenberg and that I also had a food web site and enjoyed cooking. He patted my stomach and said that I still had some way to go. I didn't know if he meant that as a cook or as an eater-of-fine food. (I don't remember having a slight paunch when I left LA three days ago.)

Chef Roux's attention to detail has influenced many of the chefs who have worked with him, including his talented brother and son, Michael.

What I found so enjoyable about the meals we had at the Brasserie Roux and the night before at Heathrow, was his light touch. Freshness is all important in his cuisine. The preparation, presentation, and saucing of each dish is designed to pull the best from all the ingredients.

As a signature feature of the lunch service a 4 course meal is offered at all the Sofitel Hotels. Chef Roux's take on the meal is a French riff on the Japanese bento box. 4 plates share a tray offering an appetizer, 2 entrees, and a dessert. Our lunch had a perfect balance of rich (Ballottine of foie gras), spare (Scallops, pea puree), comforting (Guinea fowl with mushrooms and tarragon sauce), and sweet (Lemon tart). Just as the 4 dishes counterpointed each other, so the flavors within each dish were perfectly balanced.

The savory tarragon sauce with chanterelle mushrooms drifted down over the chicken breast and shared the bottom of the plate with a helping of mashed potatoes and sauteed savoy cabbage. After the fullness of the appetizer and entrees, the lemon tart finished the meal on the perfect note.

Happy Birthday, Claire, This Cake's for You, a Banana Chocolate Chip Walnut Cake

Years ago when I was living in Rhode Island, I was introduced to the idea of handmade gifts by friends Hank and Risa. Their gifts were never store-bought. For my birthday one year Risa made a knitted palm tree sculpture to remind me of the California I had left behind and Hank carved an elegantly simple kitchen spoon out of curly maple. Decades later I'm reminded of them and their generosity every time I see their gifts.

I don't knit, nor am I a wood-worker, I'm a cook, so my gifts are far less permanent, but I still think that a handmade gift is more personal and evocative, albeit in my case, fleeting. When Michelle's parents in New Jersey have a birthday or anniversary or I want to connect with my friend-in-food Valerie in New York, I'll make a dessert and send it Express Mail. Double-wrapped in Ziploc bags and cushioned to protect against the transit, the gifts always arrive as a happy surprise. (Only once did a food-gift not survive the vagaries of the Postal Service. When a package of homemade pickles reached Valerie's apartment, the doorman called her to say that a very drippy parcel was waiting for her downstairs.)

For our cousin Claire, we wish we were in San Francisco today to celebrate her birthday. I had wanted to send her a Banana Chocolate Chip Walnut Cake, a dessert that my wife, Michelle, calls my "signature dish." Unfortunately I was laid low by a cold all week and didn't get the cake in the mail. Luckily her dad Ron is a chef-extraordinaire and hopefully he'll use the recipe to make Claire the cake so she and Marii, her mom, can enjoy our gift nonetheless.

Claire understands intuitively the power of a homemade gift. When we visited San Francisco in July, we stayed with them. I happily joined Ron and Michelle in cooking a dinner of farmers' market produce. In appreciation, Claire gave me 2 drawings, a whimsical rabbit and a colorful collage. Like her grandmother, Joanie, and Michelle's dad, Warren, she's a talented artist. I cherish those drawings because what she gave me was a gift of herself and that's a treasure.

Banana Cake with Chocolate Chips and Walnuts

Yield 8 to 10 servings

Time 90 minutes

Ingredients
  • 4 ripe bananas
  • 1 1/2 tablespoons baking soda
  • 1/4 teaspoon vanilla
  • 2 eggs
  • 1 cup plus 1 tablespoon sweet butter, room temperature
  • 1 cup white sugar
  • 1/2 cup light brown sugar
  • 2/3 cup half and half
  • 2 1/2 cups flour
  • Pinch of sea salt
  • Pinch of cayenne
  • 1/2 cup raw walnuts
  • 1/2 cup semi-sweet chocolate chips
Method
  • 1. Melt 1 tablespoon of butter and paint the inside of a 9 x 3 round cake pan, then put the pan in the freezer for 30 minutes. (The frozen butter prevents the batter from sticking to the pan.) On a cookie sheet bake the walnuts in a 350 degree oven for 20 minutes, turning every 5 minutes or so; let cool, roughly chop, and set aside.
  • 2. In a bowl mash the bananas with a fork, add the baking soda and vanilla. Stir well and set aside. In a mixer use the whisk to cream together the softened butter and both sugars. Add the eggs, mashed bananas, half and half and whisk until blended. Mix in the flour half a cup at a time, being careful not to over-beat. Remove the bowl from the mixer. Use a rubber spatula to blend in the walnuts and chocolate chips. Pour the batter into the buttered cake pan; it will only fill the pan half-way.
  • 3. Bake the cake in a 350 oven for 60-70 minutes, turning the pan every 20 minutes so the cake cooks evenly. Test to see if the cake is done by inserting a wooden skewer. If the top is browning too quickly, lightly lay a sheet of aluminum foil over the top. When the skewer comes out clean, take the cake out of the oven and place it on a wire rack for 30 minutes. Remove the cake from the pan, putting it back on the wire rack to finish cooling.
  • 4. Just before serving dust the top with powdered sugar and shaved chocolate. Serve warm or at room temperature with vanilla ice cream or freshly whipped cream.

The Jersey Shore: Mandolettes and Mandelbrot

Like many people, we're taking an end of summer trip. This time of year makes us appreciate those things that fill us with joy. Spending time with friends and family, having leisurely meals, taking long walks on the beach, and, special to this summer, watching the Olympics and following the political campaigns.

More than usual, the fall will bring big changes to our household because our son, Michael, is preparing to leave for his freshman year at college. So it was important to find time to take a trip to New Jersey to visit with Michelle's parents.

With few exceptions, Michelle's extended family has stayed on the East Coast. A few years ago they had a family reunion at a nearby resort and 75 aunts, uncles, and cousins came for the weekend. Sunday at Helen and Warren's means brunch for 20, setting up a table in the living room, bringing out the folding chairs, and sharing platters of bagels, lox, coffee cake, cold cuts, cheese, egg salad, tuna salad, fresh fruit, and lots of Helen's special iced coffee.

This trip Helen and Warren taught Michael how to play bridge because bridge is one of the intramural activities at UC Davis and Michelle's parents are bridge mavens. We ate lobsters, a rare treat, because StopRite, the local mega-supermarket had them on sale for $5.99/pound. And Helen made us mandolettes and mandelbrot from a family recipe.

During the year we're the happy recipients of Helen's cookies, but this time we enjoyed being in the kitchen while she made them for us. Luckily there were enough left over so we could take some with us, although not many survived the plane trip home. They are so delicious.

Mandolettes

Yield: about 2 dozen
Time: 30 minutes

Ingredients:

2 eggs
1/2 cup sugar
1 cup flour
Grated rind of 1/2 lemon
1/4 teaspoon cinnamon
1/2 cup chopped dried apricots or dates
1/2 cup chopped walnuts
1/2 cup chocolate chips

Method:

Preheat the oven to 350 degrees. Grease and lightly flour a cookie sheet. Mix the eggs and sugar with an electric mixer until thick. Using a spoon mix in the flour, lemon rind, and cinnamon, then add in the dried fruit, nuts, and chocolate chips. Mix well.

Put the batter on the cookie sheet, making 2 strips 2" wide.

Bake 16-18 minutes or until lightly browned. Slice into 1/2" cookies while still warm. Transfer to a rack and let cool. Store the cookies in an air-tight container and refrigerate. They can be frozen.

Mandelbrot

Yield: about 2 dozen
Time: 30 minutes

Ingredients:

3 eggs
3/4 cup sugar
3/4 cup canola oil
1/2 teaspoon salt
3 teaspoons vanilla
1 teaspoon baking powder
1/2 pound walnuts (roughly chopped)
3 cups flour

Method:

Preheat the oven to 350 degrees. Beat together the eggs, sugar, oil, salt, and vanilla until the mixture is smooth and custard colored. Add the baking powder and flour and mix well, then fold in the chopped walnuts. Form the dough into three logs about 2" wide and a foot long. Place them on an ungreased cookie sheet.

Bake 18-20 minutes or until lightly browned. While still warm, slice into 1/2" wide cookies. Place the individual cookies back on the cookie sheet and return to the oven for another 5 minutes and brown on both sides. Remove and let cool on a wire rack.

Keep the mandelbrot in an air-tight container. They can be frozen.

A Custard Easier to Make Than Creme Brulee

One of the delights of living in the Pacific Palisades is being able to take daily walks along the beach. The walks are great for exercise but also to enjoy the way the beach, ocean, and sky look in the early morning. I have to admit that I would never have discovered the pleasures of walking on the beach had it not been for my wife. For Michelle taking a walk is as necessary as breathing. I think she learned the benefits of walking from her mom, Helen. Whenever we visit her parents in New Jersey, she and her mom head to the boardwalk to take a long walk. This is their way of catching up and clearing their minds before the day begins.

This morning we walked with our friends Janet, Kelly, and Annette. We hadn't seen Kelly for a month because she and her family had been in Europe. She told us that one of the high points of the trip was a crème brûlée she'd eaten in Paris. That dessert was so delicious she couldn't stop thinking about its perfect crust and flavorful custard.

The walk was a short one because we had early meetings but there was enough time to catch up about kids going off to college in the fall (UC Davis and Cooper's Union) and trips everyone had taken (Japan, Europe, and Sundance). Before we left the beach to head back to our cars, Kelly wanted me to tell her how to make crème brûlée.

I told her that, personally I thought that a traditional crème brûlée takes too much work and uses too many egg yolks. If she wanted a good recipe she could find one by googling it. I offered her my custard recipe that is easier to make and less artery-clogging.

Custard with Baked Plums

Any stone fruit--peaches, nectarines, cherries, apricots--will work as well as plums. Cherries would be pitted and halved. Peaches and nectarines cut into eighths.

Yield 4-6 servings
Time 90 minutes

Ingredients

2 eggs
1 cup heavy cream
1/2 cup + 1 tablespoon white sugar
1 teaspoon vanilla (optional)
4 ripe plums (washed, pitted, quartered)
1 tablespoon raw sugar
1 teaspoon sweet butter

Method

Preheat the oven to 350 degrees. Place the plum quarters on a Silpat sheet or piece of tin foil on a cookie sheet. Sprinkle the tops with raw sugar, then bake 30 minutes. Remove and let cool. Spatula up any liquid that accumulated on the Silpat and reserve to drizzle over the finished custard.

Beat together the eggs and 1/2 cup white sugar. Add the cream and (optional) vanilla and stir well. Butter a large 8" round oven-proof baking dish or 6 porcelain ramekins. Pour in the custard and put in the baked plum quarters. Add 1" of water to a large roasting pan. Put the custard into the water bath and bake for 30-60 minutes. Every 15 minutes rotate the baking dish and ramekins so they cook evenly. If the custard is browning too quickly, lay a piece of tin foil over the top The custard is done when it doesn't jiggle when lightly shaken.

Remove to cool on a wire rack. Drizzle with plum liquid. Refrigerate until just before serving. To make the sugar crust, dust with the tablespoon of white sugar, then heat with a kitchen torch until lightly browned. Serve immediately.

From Father to Son: A Dinner Menu

I enjoy cooking so much, I was happy when my older son Frank asked if I could help him plan a dinner he was going to cook for a friend.

The best meal is one that starts with great ingredients, which means shopping at farmers' markets and specialty shops. Supermarkets are fine for household supplies but only a few--like Gelson's, Trader Joe's, Whole Foods, Fairway Market, Canyon Market--carry quality produce and meat.

Since Frank will be in San Francisco for the weekend, I suggest he and his friend go to the Ferry Plaza Farmers' Market Saturday morning. Located on the Embarcadero at Market, he'll find premium vegetables, fruits, cheeses, olives, freshly baked breads, desserts, and flowers. The market is open from 8:00am until 2:00pm. If they go early they'll avoid the lunch-time crowds.

While they walk around the market enjoying the cool breezes off the Bay, they can pick up snacks from Hog Island Oyster Company, a muffin from the Downtown Bakery, or sample cheeses from Andante Dairy. The market is definitely an eat-as-you-shop kind of place.

Because I know Frank won't want to spend more time in the kitchen than necessary, the menu I'm suggesting relies on quick-and-easy techniques. And since I know he understands the importance of cleaning as he cooks--a meal is so much more pleasurable if the kitchen is clean when the cooking is finished--I've tried to minimize the number of pots and pans required.

Appetizers

Serve a plate of 2-3 cheeses, ones that contrast with each other. A Triple Cream (soft) for example and a Comte (firm). Tasting cheeses at the market is a good way to find the ones you like. Olives, fresh fruit, a baguette, and wine all go well with a cheese.

Putting together the appetizer plate will take only a few minutes. Frank and his friend can snack on the appetizers while he prepares dinner.

Salad

For a salad something simple: fresh arugula tossed with crushed roasted hazelnuts and dressed with olive oil and reduced balsamic dressing, seasoned with a little sea salt and pepper.

Or a tomato and avocado salad with a touch of olive oil, seasoned with sea salt and pepper.

Pasta with Mushrooms and Parmesan Cheese

Yield 2 servings
Time 15 minutes

Ziti or penne takes about 10 minutes to cook in salted, boiling water. While the pasta is cooking, prepare the sauce. A cup of the pasta water is a key ingredient. When the pasta is strained, put a heat-proof container under the strainer and capture a cup of pasta water.

Ingredients

1/2 box of De Cecco pasta (ziti or penne)
1/2 pound mushrooms, brown or shiitake (washed, dried, thinly sliced longitudinally)
2 garlic cloves (peeled, finely chopped)
1/4 cup Italian parsley (washed, leaves only, finely chopped)
1 teaspoon sweet butter (unsalted)
1 teaspoon olive oil
1 cup pasta water
1 tablespoon Kosher salt for the pasta water
Sea salt and pepper

Method

Boil 4 quarts of water with the Kosher salt, add the pasta, stir and cook for about 10 minutes. Stir every couple of minutes to prevent the pasta from sticking together. Cook until al dente. Strain the pasta, reserving 1 cup of the pasta water, return the pasta to the pot, drizzle with olive oil, stir well, and cover with aluminum foil to keep warm.

In a frying pan, sauté the garlic, mushrooms, and parsley until lightly browned, add the butter and pasta water and simmer, reducing the liquid by half, then add the pasta and toss to coat with the sauce. Taste and adjust the seasoning with sea salt and pepper.

Serve with freshly grated Parmesan or Romano cheese.

Variations

Add to the sauté, quartered cherry tomatoes and roughly chopped up spinach leaves.

Sauté fresh corn kernels ( 1/4 cup) and shallots (1 tablespoon) with the mushrooms and parsley.

Chicken Fillets with Parsley-Bacon Topping

Yield 2 servings
Time 10 minutes

Buy either chicken tenders--which are pricey--or skinless, boneless breasts and cut them the long way so each breast makes two 1/2" thick fillets.

Ingredients

2 chicken breasts (washed, cut into 1/2" thick fillets) or 4 chicken tenders (washed)
2 slices of bacon (finely chopped)
1/4 cup Italian parsley (washed, finely chopped)
1 garlic clove (peeled, finely chopped)
1/2 avocado (peeled, roughly chopped)
Olive oil
Sea salt and pepper

Method

Season the breasts with olive oil, sea salt, and pepper. Pour a little olive oil into a frying pan and sauté the bacon and parsley on a low flame. Use a fork to break up the pieces and cook until lightly browned. Remove and drain on a paper towel.

Drizzle olive oil into the frying pan and season with sea salt and pepper. Get the pan hot on a medium flame. Add the chicken. The fillets cook quickly because they are thin. Lightly brown on each side.

Top with the sautéd bacon-parsley bits and garnish with chopped avocado on the side.

Salt Steamed Broccoli or Spinach

Yield 2 servings
Time 10 minutes (broccoli) or 5 minutes (spinach)

Ingredients

1 bunch broccoli or spinach
3 cups water
1 teaspoon salt
Olive oil

Method

Wash the broccoli and cut off the florets. If you're using spinach, wash well to get rid of the grit, remove the stems and discard. Put a steamer in a pot, add the water and salt, bring to a boil, add the broccoli florets or spinach, and cover. Steam the broccoli for 10 minutes or the spinach for 5 minutes.

Transfer to a plate and drizzle with olive oil. Serve with the chicken.

Dessert

Good fruit is available now at the farmers' market: cherries, apricots, early grapes, pluots, cantaloupe, and lots of berries. A plate of fresh fruit and a small cake from the farmers' market would make a delicious dessert. Or, with very little effort, baked pluots and apricots, coupled with ice cream or yogurt, make a beautiful finish to a meal.

Baked Pluots and Apricots

Yield 2 servings
Time
30 minutes

Ingredients

2 apricots
2 pluots or plums (washed, cut in half, pits removed)
Raw sugar

Method

Preheat the oven to 350 degrees. Put the halved apricots and pluots on a sheet of aluminum foil on a baking sheet, dust with raw sugar, and bake for 30 minutes until softened.

Serve with ice cream or yogurt.
