Ready, Set, Go: One Chicken Makes 3 Meals

Living in a coronavirus world means that markets are stressed by shoppers who need more supplies since they are cooking at home and because people are buying extra. Finding a whole chicken may take a bit of work, but the results are well-worth the effort. 



Restaurants are closed. The home kitchen is now more important than ever. What's needed are easy-to-make recipes that yield not just one but several meals.

A roasted whole chicken is a great way to go.

After you have enjoyed the hot-from-the-oven chicken, by using the bones and pan drippings, you can make a stock, which in turn can be used to make soups and sauces.

My mother and grandmother taught me that to waste food is a sin. In this case, that means always reserving the pan drippings, giblets, neck, heart, bones and carcass of the chicken to make a best-ever stock that you can use to make a delicious chicken-vegetable-rice soup or chicken and dumplings.


If a liver came with the chicken, use it to make a tasty mushroom-chicken liver pate for an amuse bouche.

Serve the whole chicken with sides or make the one chicken serve up several meals by combining a leg, wing or part of the breast with steamed rice and a chopped parsley salad.


Easy to Make, No Fuss Whole Roast Chicken

I have a friend who doesn't cook. For her, a roasted chicken is the ideal dish because it has only a few simple steps. 

As with anything in life, begin with good ingredients to achieve better results. That is especially true in cooking. Buy a good plump, pale-pink chicken, preferably one that was raised without hormones. 

Check the expiration date to confirm it is fresh. 

One chicken 3 1/2 - 4 pounds feeds 4 people. If you are feeding fewer people, the chicken will provide you with even more meals. 

If you aren't going to eat all the meat and stock within 2 days, use plastic wrap to wrap the cooked chicken, place the pieces inside a sealed plastic bag and freeze. 

To freeze the stock, place the liquid in sealable containers, preferably 8 or 16 oz for easy use. 

Only use Diamond Crystal kosher salt. All the other brands I've seen add chemical preservatives. Diamond Crystal does not.

Use a roasting sheet tray larger than the chicken, with 1" sides. 
 A sheet tray with sides lower than a roasting pan facilitates browning on the sides of the chicken. 

Line the bottom with aluminum foil and, if available, a Silpat sheet. 

If a Silpat (non-stick) sheet is not available, lining the pan with aluminum foil is sufficient for easy-clean up. The advantage of a Silpat sheet is that all the delicious drippings slide off easily and can be added to the stock. 

Silpat sheets are widely available in many supermarkets, at all cooking supply stores and online. Use a Silpat sheet that fits the dimensions of your pan.

Truss the chicken with kitchen twine if you want. 



As an option, place Yukon Gold potatoes, brown mushrooms and yellow onions on the bottom of the roasting pan when you turn over the chicken. They will acquire flavor from the drippings. Serve the vegetables with the chicken or use in a soup.

 Serves 4

Time to prep: 15 minutes

Time to cook: 60 - 90 minutes depending on size of chicken

Time to rest before serving: 5 minutes

Ingredients for roasting

1 whole 3 1/2 - 4 pound chicken, washed, liver, giblets, neck and heart if included, removed, washed and reserved separately

1 tablespoon olive oil

1/4 teaspoon sea salt

1/8 teaspoon freshly ground black pepper

4 medium sized Yukon Gold potatoes, washed, quartered (optional)

1 large yellow onion, washed, peeled, root end and top removed, quartered (optional)

6 brown mushrooms, washed, stem end removed, leave whole (optional)

Directions

First, wash your hands thoroughly with soap and water (remember the 20 second drill), then wash the chicken inside and out with water (no soap). Dry off the outside of the chicken.

Preheat the oven to 400F.

Prepare a roasting pan by lining the bottom with aluminum foil. Place a Silpat sheet on top of the foil and, if available, a roasting rack on top of the Silpat sheet and aluminum foil.

Drizzle olive oil inside and outside the whole chicken and season with sea salt and freshly ground pepper.

Place the chicken breast-side down on a roasting rack, if available. If one is not available, place the chicken breast-side down directly on the aluminum foil/Silpat sheet lined roasting pan and place into the oven.

Cook 30 minutes.

Using oven mitts, remove the chicken from the oven. Place on stove top and use tongs to turn over the chicken so now it is breast-side up.

Add vegetables to the bottom of the roasting pan (optional).


Cook another 30 minutes or until the legs move easily.

Remove from the oven. Place a sheet of aluminum foil on the top. Allow the chicken to rest, to release its juices.

Feta-Brined Roasted Whole Chicken

My favorite roast chicken takes a bit more effort (not that much!) and seven additional ingredients.

To make the roast chicken more festive, I add feta and onions on top. Neither are essential but they add delicious flavors.

Brining the whole chicken for two hours or overnight makes the meat more tender and moist. That extra step is well worth it, but can be omitted.

 Serves 4

Time to brine: at least two hours or overnight

Time to prep: 15 minutes

Time to cook: 60 - 90 minutes depending on size of chicken

1/4 cup fresh feta, preferably Bulgarian (because it is less expensive), crumbled

2 tablespoons kosher salt

1 tablespoon white sugar

4 bay leaves, whole

1/4 teaspoon whole black peppercorns

Ingredients for the topping

1 medium onion, washed, top and root end removed, peeled, sliced thin from the top to the bottom

1/2 cup Italian parsley, stems and leaves, washed, drained, finely chopped

1/4 cup fresh feta, Bulgarian, crumbled

2 tablespoons olive oil

1/4 teaspoon sea salt

1/4 teaspoon freshly ground black pepper

Small bowl of flake salt (optional) on the table

Directions for brining

Use twine to tie together the legs and wings (optional)


Place the chicken, salt, sugar and aromatics into a large heavy plastic bag or a container with a lid. Fill with cold water until the chicken is submerged. Seal. If using a plastic bag, place in a large bowl so the water doesn't leak.

Refrigerate at least two hours or overnight.

Directions for Roasting

Preheat oven to 400F.  Line a baking sheet with aluminum foil and a Silpat sheet on top of the foil for easier cleanup. Place a roasting rack on top of the lined baking sheet. If no roasting rack is available, place the chicken directly on the lined baking sheet, breast side down.

Remove the chicken from the brine. Rinse, pat dry and allow to rest uncovered for 10 minutes.

Pour the brine through a colander to capture the feta. Discard the brining aromatics. Remove the feta and reserve.

In a bowl, mix together the feta from the brine, the additional feta, onion, parsley, sea salt and black pepper.

Rub olive oil over the chicken. Add remaining olive oil to the feta-onion-parlsey topping and mix well. Set aside.

Place chicken onto the roasting rack if one is available, breast down and put into the preheated oven. Roast for thirty minutes or until the skin is brown and crisp to the touch.

Reduce oven to 350F.

Using tongs, turn over the chicken, being careful not to tear the skin. Place the chicken breast-side up on the roasting rack.

Cover the breast-side up chicken with the feta-onion-parlsey topping.  The mound of onions will seem large, but will greatly reduce during cooking. If any bits fall onto the bottom of the baking tray, no worries, you can scoop them up later.


Return to the oven. After 30 minutes, check for doneness. Wiggle a chicken leg. If there is resistance, the chicken needs more time. If the topping is getting too brown, place a sheet of aluminum over the top like a tent. Roast another 15 minutes and check for doneness. Continue roasting until the leg moves freely.

Remove from the oven and place a sheet of aluminum foil over the top so the chicken rests for 5 minutes.

Remove aluminum foil. Carve in the kitchen or at the table. Use a recently sharpened knife or kitchen sheers. Plate the chicken with the charred onion-feta-parsley mix on top.

Serve hot with sides of roasted potatoes, squash or salt boiled spinach.

Place a small bowl of flake salt on the table. The crunch of the salt will add to the pleasures of the dish.

Making chicken stock

Once the chicken has been carved, reserve all the bones and pan drippings. If there isn't time to make stock that night, refrigerate and make the next day.

I prefer to make my chicken stock without aromatics or seasoning beyond the flavors provided during roasting. That way, when you use the stock to make soup or a sauce, you can add whatever flavors you want.

To make the stock, add the bones, pan drippings, reserved neck, heart and gizzard to a 3-4 quart pot and add fresh water to cover by 2".

Place on the stove on a medium-high flame, bring to a low boil and simmer 60 minutes or until the liquid has reduced by 1/3. Taste and continue simmering until the flavor is to your liking.

Allow to cool. Strain the liquid into a bowl.  Remove the bones, neck, heart and gizzard. Pick the meat off the bones and reserve the gizzard. The meat and gizzard can be used in a salad, to make chicken and dumplings or to add to a chicken-vegetable soup.

Place stock into containers with lids. 8 and 16 oz containers are useful. An 8 oz container will make a sauce. A 16 oz container will make soup for one.

The soup can be kept frozen for 3-4 months without hurting the quality. When you remove the frozen stock from the freezer, use fresh water to rinse off any ice crystals that might have formed on the top of the stock.

To make a soup, sauté cut up vegetables in olive oil until lightly browned, add chicken stock and parts of the chicken like the gizzard, a leg or wing. Simmer covered until vegetables soften. Serve hot.

One Chicken Makes Matzo Ball Soup, Garlic-Parsley Chicken Breasts, and Chicken Ragout

Making Passover dinner takes a bit of planning, but it doesn't have to be a chore. If you're cooking for a big group, hand out assignments so you don't do all the work. If your kitchen is large enough, invite people over to help. Cooking the dinner with friends and family can be as much a part of a celebration as the meal itself.

Everyone wants to save money these days. But keeping an eye on food costs shouldn't mean cutting corners on quality and flavor. Avoid buying packaged or frozen meals and you'll be way ahead of the game. Besides saving money, you'll be eating healthier food.

On Passover, I practice what I preach by using one chicken to make three dishes. My Jewish mother would be very proud.

For me it's not Passover without matzo ball soup. But soup is only as good as the stock. Canned and packaged chicken broth are very high in salt content and, in my opinion, have an unpleasant flavor. It's much better to make your own.

The broth can be made days ahead, kept in the refrigerator or even frozen. Also, when you buy the chicken, buy a whole one, preferably a free range or organic chicken, and cut it up yourself. Whole chickens cost under $2.00/pound, while chicken parts range from $3.50-$8.00/pound.

Cutting up a Chicken

If you haven't done it before, cutting apart a whole chicken is easier than you think. Having a sharp boning or chef's knife is essential.

To remove the wings, thighs, and legs, slice through the meat and separate at the joints. Cut the wings apart, reserving the tips for the stock. To debone the breasts, glide the knife along the side of the breast bone. As you cut, pull back the breast meat, continuing to slide the knife against the ribs.

For health reasons, I remove the skin and fat from the breasts, legs and thighs. Add the skin and fat to the stock. If you're going to debone the legs and thighs, add those bones to the stock as well.

Drizzle olive oil on the breasts, legs, thighs, and wings. Put them into an air tight container and refrigerate. If you want to freeze them, put the pieces into a Ziploc style plastic bag, squeeze out the air, seal, and freeze.

Here's another tip about freezing the chicken. When you put the pieces into the plastic bag, make sure they don't touch one another. That way, if you need only one piece, say a breast, you can leave the other pieces frozen until you need them.

When my mother and grandmother made chicken stock, they added onions, celery, and carrots to the water. I don't because I want the stock to taste of chicken. If I want other flavors, I add them later.

Yield: 2 quarts

Time: 60 minutes

Ingredients

Skin, wing tips, carcass, and bones from one 4 1/2 pound chicken
4 quarts water

Method

Put the wing tips, skin, carcass, and bones into a large pot with the water, bring to a boil, reduce the heat and simmer for 60 minutes. Skim off and discard the foam. The volume will reduce by half.

Strain the stock. Pick off any meat from the carcass and reserve for later use in a salad or a chicken-vegetable soup. Discard the bones and skin.

Refrigerate overnight to easily remove the fat solids. If you're rushed for time and need the stock right away, float a slice of bread on top of the stock to absorb the fat.

The stock can be kept in the refrigerator in an air tight container for a day or two or in the freezer for months.

Matzo Ball Soup

Yield: 6-8 servings

Time: 30 minutes

For the matzo balls, we use a mix, but if you want to make them from scratch, Mark Bittman has a very good recipe.

Ingredients

1 box matzo ball mix (no soup), Manischewitz, Rokeach, or Streit's
Other ingredients per the directions on the packaged mix
2 quarts chicken stock

Method

Prepare the matzo balls per the directions on the box. Make them large or small as you like. Remember that the size of the matzo ball will double as it cooks in the salted water. 1 box of mix will make 24 small matzo balls or 12 large ones.

Put the chicken stock into a large pot. Use a slotted spoon to transfer the matzo balls from the salted water to the stock. Heat over a medium flame. Because the matzo balls are delicate, don't let the stock boil.

Garlic-Parsley Chicken Breasts

On any other day but Passover, serve the sliced chicken on top of buttered pasta.

Yield: 4-6 servings

Time: 30 minutes

Ingredients

2 chicken breast halves, boned, skinned, washed, and dried
1/2 cup Italian parsley, washed, finely chopped
2 garlic cloves, peeled, finely chopped
1 tablespoon olive oil
1/4 teaspoon sea salt
Pinch of pepper
1 tablespoon sweet butter

Method

Preheat the oven to 350 degrees. Melt the butter in the saute pan. Dredge the chicken breasts in olive oil seasoned with sea salt and black pepper

Put the breasts in the heated pan, top with parsley and garlic, drizzle with olive oil, and bake for 30 minutes.

Slice the breasts and plate. Use a rubber spatula to remove the drippings, garlic, and parsley and spoon onto the slices before serving.

Mushroom-Vegetable Chicken Ragout

Yield: 4-6 servings

Time: 60 minutes

Ingredients

2 chicken legs, skin removed, deboned, roughly chopped
2 chicken thighs, skin removed, deboned, roughly chopped
2 chicken wings, tips removed, cut apart at the joint
4 garlic cloves, skins removed, finely chopped
4 shallots or 1 medium yellow onion, peeled, roughly chopped
2 carrots, washed, peeled, cut into thick rounds
1 bunch parsley, washed, stems removed, finely chopped
1 large Yukon Gold potato, washed, cut into chunks
4 shiitake or brown mushrooms, washed, thinly sliced

Method

Heat the olive oil in a large sauce pan, season with sea salt and pepper, saute the chicken until lightly browned. Remove from the pan, drain on paper towels, set aside.

Saute the garlic, shallots, mushrooms, carrots, parsley, and potatoes until lightly browned. Return the chicken to the pan. Add 3 cups of water. Simmer for 45 minutes until the meat is tender. There should be 1 cup of broth.

Taste and adjust the seasoning. Continue simmering another 10 minutes.

Serve with steamed spinach or broccoli.

Variations

Instead of using potatoes, serve over rice

Add spinach leaves

Add cut up celery

Here's another tip about freezing the chicken. When you put the pieces into the plastic bag, make sure they don't touch one another. That way, if you need only one piece, say a breast, you can leave the other pieces frozen until you need them.

Chicken Stock

When my mother and grandmother made chicken stock, they added onions, celery, and carrots to the water. I don't because I want the stock to taste of chicken. If I want other flavors, I add them later.

Yield: 2 quarts

Time: 60 minutes

Ingredients

Skin, wing tips, carcass, and bones from one 4 1/2 pound chicken
4 quarts water

Method

Put the wing tips, skin, carcass, and bones into a large pot with the water, bring to a boil, reduce the heat and simmer for 60 minutes. Skim off and discard the foam. The volume will reduce by half.

Strain the stock. Pick off any meat from the carcass and reserve for later use in a salad or a chicken-vegetable soup. Discard the bones and skin.

Refrigerate overnight to easily remove the fat solids. If you're rushed for time and need the stock right away, float a slice of bread on top of the stock to absorb the fat.

The stock can be kept in the refrigerator in an air tight container for a day or two or in the freezer for months.

Matzo Ball Soup

Yield: 6-8 servings

Time: 30 minutes

For the matzo balls, we use a mix, but if you want to make them from scratch, Mark Bittman has a very good recipe.

Ingredients

1 box matzo ball mix (no soup), Manischewitz, Rokeach, or Streit's
Other ingredients per the directions on the packaged mix
2 quarts chicken stock

Method

Prepare the matzo balls per the directions on the box. Make them large or small as you like. Remember that the size of the matzo ball will double as it cooks in the salted water. 1 box of mix will make 24 small matzo balls or 12 large ones.

Put the chicken stock into a large pot. Use a slotted spoon to transfer the matzo balls from the salted water to the stock. Heat over a medium flame. Because the matzo balls are delicate, don't let the stock boil.

Serve hot.

A Twofer: Roast Chicken with Fresh Rosemary & Chicken Stock to Use Later

Every home cook has one foolproof recipe. Mine is a roasted chicken with fresh rosemary. Easy to make and, with just one more step, the recipe produces a quart of homemade chicken stock.

Rubbing on olive oil and seasoning the outside with fresh rosemary, sea salt, and freshly ground black pepper adds layers of flavor to the chicken as it roasts.

The chicken can be prepped ahead, trussed and seasoned, then wrapped in plastic wrap, put into a Ziploc bag, and either refrigerated or frozen. What I've learned with beef and chicken is that seasoned oil protects the meat from being effected by freezing.

Prepared this way, even the most ordinary supermarket chicken will taste good. Finding a better quality chicken will improve the flavors. Antibiotic-free chickens should always be preferred for health reasons, although I'm not entirely certain that you can taste the difference. In my experience there's no question that a Kosher chicken and free range, organic chickens do taste better. The meat is more tender, the flavor "cleaner." In Los Angeles, Trader Joe's carries several varieties of high quality chickens, as do upscale markets like Gelson's, Whole Foods, and Wild Oats. The best place to buy the freshest, healtiest chickens is at a local farmers' markets. In our neighborhood, Lily's Farm sells the freshest eggs and chickens at the Santa Monica and Palisades's Farmers' Markets. The prices for these chickens vary greatly: $1.29/lb at Ralph's to $3.75/lb for Lilly's. If you can afford it, you'll taste the difference.

Roast Chicken with Rosemary

1 whole chicken, 3 ½-4 ½ lbs., washed, pat dried
Fresh rosemary, a 2" sprig, washed, the leaves removed
2 cloves garlic, peeled, thinly julienned
1 tablespoon olive oil
Sea salt
Freshly ground black pepper

Line the bottom of a roasting pan with tin foil to help with clean up. Put a small rack on top of the tin foil. Preheat the oven to 350 degrees.

With kitchen twine, tie the legs together and the wings. Rub the olive oil all over the chicken, season with sea salt, black pepper, garlic, and the rosemary leaves. Put the chicken on the rack breast side down and put in the oven for 60 minutes.

Using tongs, turn the chicken over and return to the oven for 45 minutes. Remove from the oven and check for doneness: the legs should move easily and the juices should run clear. If needed to make the skin crisp, roast a final 15 minutes.

Remove the pan from the oven and let it rest for 5 minutes. If you're going to make a gravy, now's the time to transfer the pan drippings to a small sauce pan, add a pat of butter and 3 tablespoons of chicken stock and quickly reduce.

The chicken can be presented whole or cut apart so the pieces are easier to serve and can be served with a great many side dishes. A plain green salad with the chicken is perfect for a simple meal. Adding roasted vegetables, like potatoes, string beans, asparagus, or Brussels sprouts, makes a feast. If you want a gravy, that's easy enough, just make a simple reduction of the pan drippings, a pat of sweet butter, and a few tablespoons of chicken stock. Delicious.

Serves 4. Preparation Time: 15 minutes. Cooking Time: 2 hours.

Homemade Chicken Stock

To make the chicken stock, just gather up all the bones and put them into a large pot with 3 quarts of water. Simmer for 60 minutes. Strain out the bones and discard. Refrigerate the stock. In the morning, peel off the fat and discard. The stock will keep in the refrigerator for a couple of days or, put into pint sized Ziploc bags, for several months in the freezer. Use the stock to make sauces or soups.

Preparation Time: 5 minutes. Cooking Time: 60 minutes.

The Ultimate Comfort Food: Chicken & Dumplings

No matter the time of year, there is a need for comfort food. Winter cries out for hot soups and hearty stews. Fresh produce that had been lost during the cold months is celebrated in the spring. Summer's bounty calls for salads, fresh fruit and bbq. Fall reminds us we are mortal as we say goodbye to fresh produce in a last celebration of corn, figs and leafy greens.

Through all the seasons, I enjoy chicken and dumplings because its rich broth is nourishing. Adding a heap of farm-to-table vegetables brightens and the sweet succulence of braised chicken and wholesome dumplings adds depth and umami to the dish.

What is more, this hearty, flavorful dish is inexpensive and easy-to-make.


The basics are straightforward. Fresh chicken. A handful of favorite vegetables. A cup of white flour. A bit of half and half. A cube of butter. Homemade chicken stock. A few seasonings.

Simmer. Cover. Uncover and serve! Easy-peasy.

Farm-to-Table Vegetables, Chicken and Dumplings

Use a good quality organic chicken and buy farmers market produce when available. 

If you have dried whole shiitake mushrooms, use them. They add a distinctive flavor, different from the delicate flavor of thinly sliced shiitakes.

Use vegetables you love. And lots of them. English peas. Squash rounds. Kabocha chunks. Roasted sweet potatoes. Green beans. Kale. Shredded cabbage. Chopped turnips. My preference is to tilt the balance towards the fresh produce, plating great mounds of vegetables with a leg and a wing or two pieces of breast.

The dish can be covered and served the next day or divided into smaller covered containers and frozen for up to three months.

Yield: 4 servings

Time to prep: 15 minutes (if you already have chicken stock) or 1 hour (including time to make chicken stock)

Time to cook: 1 hour, 15 minutes

Total time: 1 hour, 30 minutes - 2 hours, 15 minutes

Ingredients

1 whole chicken approximately 3 lbs, preferably organic, cut apart as described below
1 medium yellow onion, washed, ends trimmed, outer skin removed, cut into 1/2" pieces
1 cup green beans, washed, ends removed, cut into 1" long pieces
1 cup broccoli florets, washed and cut into 1" pieces or broccoli leaves, washed, shredded
2 cups shiitake mushrooms, washed, stem end trimmed, thinly sliced or 2 cups dried whole shiitake mushrooms, washed
1/4 cup Italian parsley, leaves only, washed, finely chopped
1 garlic, peeled, finely chopped (optional)
1/2 cup celery, washed, ends trimmed, cut into 1/2" pieces (optional)
4 cups homemade chicken stock, as described below
1 large carrot, washed, trimmed, peeled, cut into 1/2" thick rounds
2 tablespoons extra virgin olive oil
1/4 teaspoon sea salt
Pinch freshly ground black pepper
Pinch cayenne powder (optional)


Dumpling ingredients

1 cup all-purpose flour, white
2 tablespoons sweet (unsalted) butter, cut into fine bits
1 scallion, washed, ends trimmed, green and white parts finely chopped or 2 tablespoons Italian parsley, leaves only, washed, finely chopped
1 teaspoon baking soda
1/4 teaspoon sea salt
Pinch freshly ground black pepper
1/2-1/3 cup half and half, cream or whole milk


Directions

Break down the whole chicken by cutting off the legs, thighs, wings and breasts.

Place the carcass into a large pot, cover with water and simmer covered for 45 minutes. Strain through a colander, reserving liquid in a bowl. Let the carcass cool and remove the meat.

Use what stock is needed for the dish, reserving the rest covered in the refrigerator for up to three days or in the freezer for up to six months. The meat pulled off the carcass can be added to the braise or submerged in stock and frozen for later use.

Separate legs from thighs. Separate the three parts of the wings, adding the wing tips to the stock pot. Cut chicken breasts into three almost equal sized pieces. If removing skin from the parts, add to the stock.


In a mixing bowl, add flour, cut up butter, scallion (or Italian parsley), baking soda, sea salt and black pepper. Using a fork, mix well. Slowly add milk, stirring until thickened. The resulting mixture should be like thick batter. If the mixture is too runny, add a tablespoon of flour. Cover and set aside.


For the braise, in a large pot, heat olive oil and sauté the chicken parts. Use tongs to turn the parts until each piece is browned on all sides. Remove and set aside.

Sauté the onions and garlic (optional) in the pot with the chicken fat and oil until softened. Season with sea salt and freshly ground black pepper. Add chicken stock. Return browned chicken pieces to the pot. Stir and simmer 20 minutes.

Add vegetables.


To make the dumplings, use two soup spoons to create small rounds of dough. Drop each dumpling into the simmering liquid. Make room for each dumpling so they do not touch because they will expand as they cook. Add all the dumplings and cover.

Adjust the heat so the stock simmers but does not boil.

Cook 30 minutes and serve immediately. Place several dumplings into each bowl, adding a protein and a good helping of vegetables with several tablespoons of gravy.

Serve hot.

Up on the Mountain

It's such a pleasure to break the routine and get out of town. A long weekend out of LA revives my spirit. Right now I'm at Robert Redford's Sundance Resort in the Wasatch Mountain Range, just below Mount Timpanogos.

On the mountain all signs point to summer. Wild flowers have started to bloom; the sky is bright, blue and sunny; the meadows are covered with lush green grasses. And yet winter hasn't given up entirely. A week ago there were snow flurries. Two days ago rain pelted the mountainside.

Coming up from LA, what a pleasure to enjoy the cool air and quiet of the mountain. The reason for the trip is to visit my wife, Michelle, who works at Sundance several months out of the year heading up the Feature Film Program. Every June she's on the mountain for most of the month. I'm here for a connubial visit. While she works I can catch up with old friends, read, write, and--of course--cook.

The food at the resort is exceptionally good, from the upscale Tree Room to the casual and rustic Foundry Grill Room. But after several weeks of eating all her meals in a tent with a group of 100 director fellows, creative advisers, staff, and crew, she appreciates a break from the buffet table. At least while I'm here she can have some home-cooked treats. The great thing about liking to cook is that it's not only fun for the cook, it's good for the person who gets to eat.

As a man who likes to cook, I pride myself on taking a few ingredients and maximizing them efficiently. For this trip I asked Michelle to buy 4 chicken legs when she stopped at the supermarket in Orem. When I came up I brought an onion, garlic, rosemary, a carrot, flour, parsley, sea salt, baking powder, mushrooms, and my traveling knife set. From the resort I would be able to get butter, half and half, and olive oil.

Chicken Stock

You can buy chicken stock in the supermarket but I recommend making your own. It's easy, tastes better, doesn't have the high salt content of packaged stock, and only adds one simple step.

Yield 2 cups of stock
Time 1 hour
Ingredients

4 chicken leg bones & skin
Olive oil

Method

Debone the legs, reserve the meat for another dish, put the bones and skin into a stock pot and sauté with olive oil until lightly browned. Add 4 cups of water and simmer 30 minutes. Strain and discard the bones and skin. Refrigerate so you can skim off the fat.

Dumplings with Vegetables

Yield 2 servings
Time 45 minutes

Ingredients

1 carrot (washed, peeled, finely chopped)
1/2 yellow onion (washed, peeled, finely chopped)
2 garlic cloves (peeled, finely chopped)
4 mushrooms (washed, thinly sliced)
1 rosemary sprig (washed)
2 cups chicken stock
1 cup flour
1 tablespoon sweet butter
1 teaspoon baking soda
1 teaspoon sugar
1/2 - 3/4 cup half and half
Olive oil
Sea salt and pepper

Method

Sauté the carrot, onion, garlic, rosemary, and mushrooms with the olive oil in a medium sized sauce pan until lightly browned. Add the chicken stock and simmer for 15 minutes. Remove the rosemary sprig and discard.

In a bowl mix together the flour, baking soda, sugar, season with sea salt and pepper. Finely chop the butter, add to the flour and mix well. Slowly pour in the half and half, stirring until the batter has a thick consistency. Using 2 spoons make dumplings and ease them them into the hot liquid. Cover and simmer for 30 minutes.

Chicken with Parsley

Yield 2 servings
Time 30 minutes

Ingredients

4 chicken legs (skinned, deboned, meat only; bones and skin used to make stock)
1 bunch Italian parsley (washed, finely chopped)
1/2 yellow onion (washed, peeled, thinly sliced)
2 garlic cloves (peeled, finely chopped)
2 cups chicken stock or water
1 teaspoon sweet butter
1 tablespoon olive oil
Sea salt and pepper

Method

Chop the leg meat into bite sized pieces and marinate an hour or overnight with olive oil, sea salt, and pepper. In a medium sized sauce pan, sauté the chicken pieces until lightly browned, add the parsley, onion, and garlic, stir frequently, cook until browned, add the stock or water and butter. Simmer uncovered for 15-20 minutes until the liquid has thickened. Taste and adjust the seasoning with sea salt and pepper.

Variations

Add capers and pitted black olives.

Add cherry tomatoes to the sauté.

Use rosemary instead of parsley.

Top with homemade croutons.

Serve on pasta.

Comfort Food: Sausages and Chicken Wings with Shitake Mushrooms

Every winter we go to the Sundance Resort in Utah where my wife runs a feature film program at Robert Redford's Sundance Institute. She stays for most of the month but I go back to LA after a long weekend, then fly back four days later to go to the Sundance Film Festival in Park City.

When we're at the resort, my sons go skiing. I tried it a couple of times and realized it just isn't my thing. I wish I had my sons' athleticism. I don't. But I'm completely happy because Sundance is the perfect setting to cook. The condo has a simple kitchen set-up. No oven and only a 2-burner stove top, but outside the snow covered mountain is postcard perfect and inside it's nice and warm.

I do a lot of cooking at the resort, but I'm not cooking for the time we're here. I'm cooking and then freezing the food so we can have home-cooked meals when we're at the Festival, where watching 3-4 films a day means there's no time to cook. If you're lucky there's the occasional party where you can grab a mini-crab cake or some cheese and crackers.

I wanted to make comfort food. Nourishing, warm dishes that would revive us after a very long day.

Before we came up to the resort, we stopped at Macey's, one of the local supermarkets, and picked up basics: 2 Gold'n Plump organic chickens, a couple of pounds of extra lean ground beef, a package of Italian sweet sausages, and a selection of fresh vegetables.

Since all the dishes had to be able to survive freezing and reheating, everything would have a sauce or be in a soup, that would protect against freezer burn and drying out. That meant the first thing I needed to do was to make chicken stock.

CHICKEN STOCK
Cutting up the 2 chickens, I had the carcasses and wing tips for the stock. Simmered on a low boil with 16 cups of water for 1 hour, then strained to remove the bones, I had 8 cups of stock. I pulled 1 cup of meat off the bones, perfect for chicken soup. Because I needed a lot of stock, I used the now-picked-clean bones for a 2nd boil by covering the bones with water and simmering for 30 minutes. Straining out the bones gave me an additional 2 cups of stock. If possible, refrigerate the stock overnight so the fat can be removed.

Sautéed saUSAGES AND CHICKEN WINGS WITH SHIiTAKE MUSHROOMS
4
wings, washed, cut into pieces, the tips used for stock
2 Italian sweet sausages, cut into ¼” rounds
½ bunch spinach, washed, roughly chopped
1 cup shiitake mushrooms, fresh, or dried, soaked for 2 hours in hot water, stems removed
1 cup chicken stock
½ cup shiitake mushroom soaking water
2 cloves garlic, peeled, finely chopped
2 tablespoon olive oil
Sea salt
Freshly ground black pepper

On a medium flame, heat 1 tablespoon of olive oil, season with sea salt and freshly ground black pepper. Saute the chicken wings until brown on all sides. Remove and sauté the sausage rounds until brown, drain and remove. Pour off the excess oil.

Add the 2nd tablespoon of olive oil and sauté the shiiake mushrooms and garlic until lightly browned. Deglaze the pan with the 2 stocks, add the spinach, then put back the wings and sausages. Simmer for 30 minutes lightly covered with a sheet of tin foil.

Serve in a bowl with soup spoons and lots of napkins because this is finger-eating food. Or, to make a more substantial entree, add pasta or rice to the bowl.

Serves 2-4. Preparation Time: 20 minutes. Cooking Time: 60 minutes.

For everything going into the freezer, I use an airtight container, like the ones made by Ziploc, and make sure that the liquid covers the meat and vegetables to avoid freezer burn.
