Shrimp 101: Easy to Prepare and Delicious

Shrimp are easy to prepare, nutritious and low in fat. Adaptable with many sauces and preparations, their versatility makes them an ideal ingredient in appetizers, soups and main courses. 


To document a meal I made for dinner, I posted a video of shrimps charring on a stove top grill. A friend followed my visual directions but was disappointed with the result. The shrimp were not tasty in the way she expected.

She asked for suggestions. I had a few.

Where to buy shrimp and which shrimp to buy

First off, finding good shrimp isn’t easy. After years of hit or miss sources (sometimes even the most expensive fish market/upscale grocery store would have shrimp that were fresh and sometimes not so fresh), I found a good shrimp in Los Angeles at Ralph’s Market/owned by Krogers.

You probably already know this but always buy shrimp in the shell. If you can find “Ez-Peel” shrimp, that’s good because the back of the shrimp’s shell has already been cut and the back vein already (mostly) removed.

As to size, I prefer medium (31/35 per lb.) sized shrimp. The shrimp at Ralph's are farm raised. Their texture and flavor are very good. Wild shrimp will cost more. When buying from a new-to-you vendor, try different sizes, farmed and fresh shrimp to find what you like. 

When you get the shrimp home, you can peel them or not but rinse them in clean water and refrigerate in an air-tight container.  Use them within 1-2 days. 

When you’re ready to cook them, rinse again. if the shrimp are Ez-Peel, remove the shells with your fingers. If not, run a sharp pairing knife down the back of each shrimp to remove the shells. 

My mother, who lived in Costa Rica and ate a lot of rice there, taught me to put the shells into a small saucepan, cover with water, simmer and strain and save the broth to use in soups and sauces. Very tasty.

Wash the peeled shrimp and remove the black vein that runs along the back.


Rinse again. Now they are ready to cook. Cooking shrimp is very easy. The trick is they cook very quickly.

Salt boiling shrimp

If you want shrimp for a shrimp cocktail or in a salad, heat water in a small saucepan. Use enough water to cover by 1” the amount of shrimp. 

Boil the water. Add a pinch of kosher salt (only kosher salt made by Diamond Crystal because they don’t use additives) or sea salt. 

Add the shrimp. They will cook quickly. Within 20-30 SECONDS. 

Drain and cool by putting ice cubes with the shrimp. Drain. Serve cold or at room temperature or refrigerate in an airtight container.

Grilling or sautéing shrimp

Toss the peeled and deveined shrimp in a bowl with olive oil, sea salt and freshly ground black pepper. 

Using a grill or sautéed pan (cast iron or carbon steel is preferred), place the shrimp individually onto the hot surface. Using tongs, turn them within 5-10 seconds. Cook briefly on each side and remove. 


The grill I use is a stove-top grill that does a great job with easy clean up. And, it is very inexpensive. Here’s a link to the grill on Amazon. 

Grilled shrimp can be served with a chopped vegetable salad (as in the video) or as an appetizer with a cocktail or remoulade sauce.

Shrimp with sauce

Shrimp can be served with any number of cold or heated sauces. My favorite cocktail sauce is a classic. Catsup, lemon juice, capers, grated horseradish and Worcester sauce on the side and Saltine crackers. 

When adding shrimp to curry or a Mexican garlic sauce, add the shrimp just before serving remembering to cook them for only a minute or two to keep them juicy.

Shrimp Steam Up and Go to Town with Remoulade and Charred Shallots

Often the most ingenious cooking techniques are the simplest. Years ago I met a Thai chef who graciously showed me some basic cooking techniques. One particular technique I loved was cooking raw shrimp in an aluminum foil pouch. The resulting shrimp were plump, juicy and sweet. Of course the freshest, highest quality shrimp needed to be used.

I loved the technique not only because of the result but also because as the shrimp cooked, the pouch expanded. That reminded me of the way stove-top Jiffy popcorn puffed up.
Long before there was microwavable popcorn, Jiffy satisfied the hunger for easy-to-make snack food. Prepared correctly, the popcorn came out nicely steamed. But if you weren't careful, the bottom kernels burned and gave the whole bag of popcorn a harsh charcoal flavor. The same is true of cooking the shrimp in an aluminum pouch, be careful not to burn the shrimp.

Preparing the shrimp this way can produce perfectly steamed shrimp to use for an icy-cold shrimp cocktail to accompany an equally icy-cold vodka martini (dirty, of course, with an olive and an onion) or to be served hot and steaming on a platter.

With the shrimp cocktail, serve a horseradish-hot cocktail sauce. With the hot shrimp, remoulade is a good accompanying sauce or chermoula.

After steaming, the shrimp can be quickly charred on a carbon steel pan to add a bit of color and sweetness. That's what I did tonight for dinner when I made the shrimp with charred shallots and remoulade.

FAT JUICY STEAMED SHRIMP WITH REMOULADE SAUCE AND CHARRED SHALLOTS

Raw shrimp that have been shelled and devined can be used, but I prefer to go the distance and do the prep work myself. That way I know when the shelling and deveining was done and I will harvest the shells to make a light and delicious shrimp-shell sauce. More about that in another post.

Use any size shrimp you like. Smaller shrimp will cook more quickly and are more trouble to shell and devein. In general, I would recommend medium to large sized shrimp.

Time to prepare depends if you are shelling and deveining them yourself. The cooking time will also vary, depending on the size of the shrimp.

Choosing a mustard to use to make the remoulade is a personal choice. Dijon has a good clean flavor but can be intense. A milder choice is deli-style mustards. In either case, buy a good quality mustard.

Serves 4 as an entree, Serves 8 as an appetizer

Time to prep: approximately 15 minutes

Time to cook: approximately 5 minutes

Total time: approximately 20 minutes

Ingredients

2 pounds raw shrimp, washed, pat dried
1/4 cup mayonnaise preferably Best Foods or Heilman's
1/4 cup good quality mustard, either deli style or Dijon
1 tablespoon capers, finely chopped
1/4 teaspoon freshly ground black pepper
5-6 large shallots, washed, skins removed and ends trimmed and discarded
1/2 teaspoon olive oil
1 sheet aluminum 15" long

Directions

To make the remoulade, mix together the mayonnaise, mustard and capers, seasoned with black pepper. Place in an air tight container and refrigerator.

If the raw shrimp are shelled and deveined, wash and pat dry. If not, peel the shells off, starting with the legs and rolling them off the flesh, pulling off the tail at the same time.
Using a sharp paring knife, cut a shallow incision in the back of the shrimp, remove the black vein and discard. After shelling and deveining, rinse the shrimp again in clean water, drain and pat dry.

Lay the sheet of aluminum on a flat surface. In the middle of the sheet, lay the shrimp snuggly together, all facing the same way. Imagine they are coodling in bed.
Fold the foil over the shrimp and neatly seal the ends being careful to keep the shrimp flat. The objective is to create an air-tight pouch. The ends of the pouch should be folded over 3-4 times so that as the pouch expands, the ends do not pop open releasing the heat and liquid.

Heat a pan large enough that the pouch can fit in the center. Turn the heat onto high. Have a pair of long tongs at the ready.

To determine that the pan is hot enough, dip three fingers into a bowl of water and fling drops of water into the pan. If the water skitters across, the pan is hot enough.

Have a large plate ready.

Place the pouch onto the hot pan. When the pouch inflates, the shrimp are cooked on that side. If the pouch is not sealed completely, the pouch may not inflate. The shrimp will cook regardless. In which case, assume that 3 minutes on each side will cook the shrimp.
Carefully use the tongs to turn the pouch over. Lay the pouch in the middle of the hot pan. If the pouch had inflated, turning it over will deflate it. When it inflates again or the pouch has been on the hot pan for 3-4 minutes, the shrimp should be cooked.

Using the tongs, hold the pouch over a bowl and cut open the pouch. Remove the shrimp, reserve the liquid to make a sauce for another dish and, if you are not immediately serving the shrimp, refrigerate in a sealed container for up to 24 hours.
Just before serving, finely slice the shallots the long way (end to end). Toss with olive oil. Heat a frying pan. I like using a carbon steel pan which will quickly add a beautifully flavorful caramelization on the shallot strands. Place the oiled shallots into the pan. Using tongs, toss well and sauté until the shallots are charred. Remove from the pan and set aside.

Heat the pan again. When it is hot, place the shrimp in the pan for a few seconds on each side, just long enough to lightly char the sides. Remove.

Serve the shrimp topped with the charred shallots accompanied with a small bowl of remoulade.

The shrimp can be accompanied with steamed rice, freshly made pasta or a tossed green salad. And don't forget the dirty martini!

Toast Goes Savory at Superba Food + Bread in Venice

I'm enjoying doing chef cooking demonstrations for my YouTube Channel Secrets of Restaurant Chefs.  A dozen chefs have taken me into their restaurant-kitchens to prepare signature dishes. I've learned so much.
Chef Taylor Boudreaux demonstrated how to get crispy skin on salmon filets. That session changed my cooking because he turned me on to carbon steel pans which are better than cast iron pans. At the moment I have only found them at Surfas Culinary District (8777 Washington Blvd, Culver City, CA 90232),  although regrettably, they are often sold out of the pans.
High heat is now my mantra as I use my carbon steel pans (10", 12.5" and 14") to make crispy skin fish filets, charred tofu, sweet scallops finished with butter, steaks with dry rub crust, vegetables caramelized by high heat and seared Japanese noodles.
Some chefs have kitchens that are expansive work spaces with the latest high tech tools like David Codney at the Peninsula where he and his staff demonstrated making mac n' cheese with truffles, a fine dining riff on a childhood favorite.
In the only hotel restaurant on Rodeo Drive in Beverly Hills, in a tiny corner of his compact kitchen, David Padillo showed me how easy it is to make a spicy, citrus drunken shrimp, Mexican style.
In the city of Napa at the entrance way to the Napa Valley chef Paul Fields prepares gluten-free meals for guests of the Inn on Randolph. When I stayed at the Inn he made gluten-free chocolate chip cookies and a breakfast of Beluga lentils with roasted vegetables topped with a poached egg.
For Zester Daily I posted an interview and video cooking demonstration with the baker and chef at Superba Food + Bread (1900 S. Lincoln Blvd., Los Angeles CA 90291). Chef Jason Travi and baker Jonathan Eng used their partnership to create savory toasts, elevating that most simple of snacks into a gastronomic delight. A signature toast is one that uses a grilled slice of Eng's pain au levain topped with Travi's Lebanese red pepper-walnut muhammara sauce and finished with spoonfuls of fresh burrata.
Take a look at the Zester Daily article with a video by Travi and Eng. The toast in the video is the toast I ate after the demonstration. It was absolutely delicious. And easy to make at home.

Old School Mexican Food Rocks at La Fiesta Brava on Venice's Rose Avenue

Long-time locals know that when you want an affordable, home-cooked Mexican meal, walk into La Fiesta Brava (259b Hampton Drive, Venice, CA 90291, 310/399-8005, open 7 days a week 10:30am-9:00pm for breakfast, lunch and dinner). Earlier this year, the restaurant relocated from its long time location on Rose. Now, it is just around the corner from where it used to be, almost across the street from The Rose Cafe.
Crowds fill the restaurant and the dining room buzzes with laugher and conversation. La Fiesta Brava is a fun place to hang out and enjoy a well-made meal.

For decades, mom and pop businesses have served the largely Hispanic community in the surrounding neighborhood.  

But Rose Avenue is changing.

Challenging Abbot Kinney's reputation as Venice's restaurant row, between 5th and 6th Avenues on Rose Avenue, half a dozen trendy restaurants with outdoor patios are filled with upscale diners.

Cafe Gratitude, Simon's Provisions ("Wine. Draft Beer. Provisions."), Hostaria de Piccolo, Cerveteca, Venice Beach Wines and Superba Snack Bar have attracted a hip crowd, eager to enjoy the relaxed atmosphere with servings of quality food and beverages. 

And then there is La Fiesta Brava. 

Opened twenty-three years ago by Samuel and Evangelina Camarena, the intimate dining room looks more like a living room with tables and chairs than a restaurant. A family affair, Samuel and Evangelina managed the restaurant with their kids, Jasmin, Nancy and Sam Jr. Four years after Samuel's passing, the family continues to run the restaurant with the kids juggling work and school. The night we were there, Sam Jr. was waiting tables, taking a break from his business administration classes at El Camino College.
Samuel and Evangelina came from Jalisco and the menu reflects the dishes they prepared at home in Mexico.

Not bound by any one regional cuisine, what they serve is what they like to eat. The menu features stews with beef, chicken or shrimp, seafood sautéed with a variety of sauces, burritos, tostadas, fajitas, shrimp cocktails, enchiladas, moles, tacos, quesadillas, Huevos Rancheros, flan for dessert and hamburgers and fries.

Many of the dishes sound familiar. Who hasn't had a fish taco? But the one served at La Fiesta Brava was unlike any I have eaten elsewhere.
The small plate arrived with the taco topped with shredded lettuce and a sprinkling of chopped tomato. The sea bass was grilled not breaded and deep fried. The piece of fish was longer than the plate was wide. Beautifully prepared the moist filet tasted fresh and sweet. Another pleasure of the dish was the price. At under $3.00, the fish taco was a bargain.

I am a sucker for shrimp cocktails, a legacy of having to accompany my parents to upscale restaurants when I was young. While they excitedly feasted on prime rib, spaghetti Alfredo and chicken Kiev, nothing on the menus ever appealed to me except for the shrimp cocktail. 

European style shrimp cocktails are elegant affairs, with shrimp hanging on the rim of a champagne glass served with a catsup-horseraddish sauce and a lemon slice. The Mexican version is a more primitive artifact. The one at La Fiesta Brava gave me a great sense memory back to trips I have taken to Tijuana, San Jose del Cabo and Playa del Carmen.
A large cut-glass goblet arrived at the table with a plate of lime wedges. A dozen sweet shrimp and fat chunks of avocado floated in a tomato sauce flavored with lots of chopped white onion and fresh cilantro. The sauce was good but I happily added to the flavor with a generous squeeze of the lime wedges and a good dousing of the housemade roasted chile ancho salsa. Delicious.

My wife ordered the garlic shrimp. Sautéed shrimps shared the large plate with generous portions of refried beans and rice. The garlic was pulverized and coated each shrimp in a spicy crust. The beans were sweet. The rice was moist.
Even though La Fiesta Brava does not have a liquor license, as Sam Jr. explained, they encourage guests to BYO. The "corkage" fee to bring your own wine or beer is $1.50. Yeah, you read that right. $1.50. This is a friendly restaurant!

We're looking forward to our next visit so we can sample more of the menu. The quandary is, we really enjoyed the dishes we ordered the last time. The solution is simple, we'll bring friends so we can order more and share everything.

Shrimp and Citrus Celebrate Summer Together

Last week we were in New York. We lucked out, weather-wise. The week before had been stormy, with rain almost every day. When we were planning the trip, the forecast said it would continue raining the entire week. Long story short, it didn't rain.

A little bit of rain last Monday evening. Otherwise, the skies were blue most of the time and the temperatures during the day were in the high 50's and low 60s. Perfect New York-walking around weather. Now I hear cold and even snow has returned. Spring is always a moveable feast in New York.
So, I'm happy to be back home. I started a new video project, interviewing chefs whose recipes appear in the Beverly Hills Centennial Cookbook. Chef David Padilla who works at Luxe Rodeo Drive Hotel demonstrated how to make a delicious sautéed shrimp dish.
He calls it Drunken Shrimp, which is a classic Chinese dish, but his is decidedly Latin in his use of citrus and chiles. I wrote the profile for Zester Daily. The full interview and video are there. Please take a look: Drunken Shrimp from Chef David Padilla of Luxe.

East Comes West at Chi Lin in West Hollywood

Part of a growing trend to serve Chinese food with locavoire sourcing and an attention to healthy choices, Chi Lin off the Sunset Strip  (9201 Sunset Blvd, West Hollywood CA 90069, 310/278-2068) pays homage to the spirit of Chinese cuisine with upscale versions of classic dishes like Peking Duck, soup with steamed dumplings, tangerine beef, tofu with pork and stir fried clams.
Tucked away just off Sunset Boulevard next to the much larger restaurant, Rivabella, the entrance to Chi Lin is marked by a bordello red neon sign suggesting forbidden treats and dangers are inside.

Chi Lin is a restaurant for special occasions. The dining room  is perfect for a romantic liaison with a new friend or to celebrate the love of your life on an important anniversary. A hostess in a clinging black leather dress, cut mid-thigh, will lead you to your table in an intimate dining room.
Rows of lights hang down from the ceiling, their dim rays illuminating not so much the room as the essence of the space. The mirrored walls reflect the ceiling lights to infinity. Tables and booths allow for comfortable seating. The waitstaff is attentive. The menu accommodates omnivores, pescetarians and vegetarians.

Of course, if you are an omnivore, willing to eat whatever flies, walks and swims on planet Earth, you will be very happy indeed. Shellfish, fish, pork, lamb, beef, chicken and duck are featured ingredients. As befits an upscale restaurant, the plating of the dishes is beautiful. Chi Lin embraces the theatrical in its setting and its dishes in a good way.
Every Tuesday, a sampling of Chi Lin's signature dish, Peking Duck, is offered in two presentations along with a Sparkling Mao vodka cocktail at an affordable $24.00.  The mini-tasting gives diners an authentic presentation of a classic Chinese dish, with it's intoxicatingly mix of fatty-crisp-salty-sweetness.

The menu is extensive enough to encourage repeat visits. After a tasting with other food writers, everyone made notes about the menu items to try next time.
I definitely want to try the Steamed Char Siu Bao, Fresh Kale and Crispy Shiitake Mushroom Salad, Wok-Fired Manila Clams with Lap Xuong and Xo Sauce and the Charred Haricot Vert with Chinese Flavors.
And, I would order again the 5-Spice Smoked Shaved Beef on Crispy Scallion Pastry, the vegetarian Yu-Shiang Style Eggplant Chips, the pescetarian Peking Prawns, Black Pepper Two Basil Filet Mignon with Crispy Shiso Leaf and a selection of the desserts.

Election Eve Munchies

I want the election to be over. I'm tired of partisanship, attack ads and endless news cycles of pontificating pundits.
I want the election to be over as long as my candidates and propositions win. That's what I meant to say.

If my side needs more time to win the day, so be it. Take all the time you need.

Skin in the game
Every election cycle feels special. The stakes are always high. The choices game changing. The amount of campaign money spent on elections stupefyingly large.

If you are a conservative, you are convinced the moral fabric of the country is on the line. Our economic future is at risk. 

If you are a liberal, you have seen the Ryan budget and the writing is on the wall for all the Progressive advances since Teddy Roosevelt. If you care about social inequality and women's rights, you are bewildered by the seemingly unending attacks that come from Republican candidates.

On Election Night this Tuesday, given the number of key battle ground states and the voting difficulties created by super storm Sandy, conclusive results might not be forthcoming until late in the evening or early morning.

What you're going to eat on Election Night might not be the first thing on your mind, but after you've finished working the phone banks and you've driven the last person to the polls before they close, it's time to head to a TV at home or a friend's and be prepared for the long haul.

If you don't want to cook, have a collection of take-out menus available. That way you are only a phone call, your credit card and 45 minutes away from a table full of pizza, stir fried green beans with beef and salads with seasonal greens and homemade croutons.

On the other hand, if you want home cooked food, here are some easy-to-make favorites that we like to serve when we're watching the Super Bowl, NBA Playoffs and waiting to celebrate the beginning of another year.

Good luck to you and all the candidates you believe in and the propositions you are voting for.


Tapenade with Charred Garlic

A secret weapon in last minute cooking, tapenade brightens any meal either as an appetizer or a condiment. If you use pitted, canned olives, making tapenade will take 10-15 minutes.
 
The taste of your tapenade depends on the quality of the olives.

Serves 6-8

Ingredients

1 can pitted olives, drained weight 6 oz., preferably green or kalamata olives
2-3 tablespoons olive oil
2 garlic cloves with skins
¼ cup Italian parsley, washed, leaves only, roughly chopped
¼ teaspoon pepper flakes (optional)
Black pepper to taste

Directions

Skewer the garlic cloves on the end of a knife or a metal skewer and hold over a gas flame to burn off the outer skins. Let cool, remove any pieces of charred skin and roughly chop the cloves.

In a small blender or food processer, place the drained olives, olive oil, garlic, parsley and pepper flakes. Pulse until the olives are roughly chopped. Taste and adjust the seasoning with the addition of black pepper, sea salt, pepper flakes and olive oil.

Pulse again until the tapenade achieves the desired texture. Personally I like a tapenade that has a rustic look with the olives coarsely chopped rather than puréed.

Refrigerate until ready to use and serve at room temperature.

Variations

 2 anchovies packed in oil, roughly chopped and added with the olives. If salted, rinse before adding.

1 tablespoon capers added with the olives.

Lavash Crisps

Served in the Middle East, lavash and pita are commonly used instead of bread. Flat, unleavened lavash has a delicious, lightly grilled flavor when fresh. Making crisps makes use of lavash that might otherwise have gotten stale and gone to waste.
Lavash crisps have more flavor and are more flaky than commercially manufactured chips. Serve them with salsa, tapenade, dips or thin slices of cheese.

The crisps will last for weeks if kept refrigerated in an airtight container. 

Serves 6-8

Ingredients

1 large or 2 small sheets of lavash
1 cup olive or safflower oil
Sea salt and black pepper to taste
5-6 paper towel sheets

Directions

Cut the lavash sheets into 2” squares by cutting the sheet in half, placing the halves on top of each other, cutting those in half and doing that again until the pieces are 2” wide. Cut the 2” wide strips into 2” squares and set aside. If not cooked immediately, store in an airtight container.

In a large frying pan or griddle, heat ¼ cup of the oil. Season with sea salt and black pepper and heat on a medium-low flame. Be careful not to burn the oil or cause it to smoke.

Lay a paper towel sheet on a large plate or baking sheet.

Add the lavash squares to the hot oil. Do not overlap. Using tongs, turn over the lavash when they are lightly browned and cook the other side. They cook quickly so watch them closely.

Remove the cooked crisps and place them on the paper towel. Cook another batch. Place a clean paper towel on top of each layer to absorb excess oil.

Replenish the oil in the frying pan as needed and season with sea salt and black pepper. Allow the oil to reach the proper temperature before adding more lavash.

Discard the paper towels when the crisps cool. Store refrigerated in an airtight container. Serve at room temperature.


Spaghetti and Shrimp

To build out the flavors, other ingredients can be added to this easy to make dish. Check out the variations below.
Yield: 4 servings

Time: 30 minutes

Ingredients

1 pound shrimp, washed, shelled and deveined
1 pound spaghetti
2 cloves garlic, peeled, finely chopped
2 tablespoons yellow onion, peeled, finely chopped
1/4 cup Italian parsley, washed, dried, leaves only, finely chopped
3 tablespoon sweet butter
2 tablespoons olive oil
1 teaspoon Kosher salt
1 cup pasta water
Sea salt and black pepper to taste
1/2 cup freshly grated Parmesan

Instructions

To help with timing the dish, make the pasta first.

Bring a gallon of water to boil in a large stock pot. Add kosher salt and pasta. Every five minutes use tongs to stir the pasta to keep it separated. Place a strainer in the sink along with a heat-proof cup to capture 1 cup of pasta water. In ten minutes or until the pasta is al dente (firm to the bite), strain the pasta and reserve the cup of pasta water.

Return the pasta to the still hot pot. Add 1 tablespoon sweet butter and 1 teaspoon olive oil, season with 1/4 teaspoon each, freshly ground black pepper and sea salt. Stir well with tongs. Lay a piece of aluminum foil over the top of the pot to help the pasta retain heat.

Leave the shrimp whole or cut into bite sized pieces. In a large chefs pan, heat 1 tablespoon olive oil and saute the shrimp until lightly pink. Remove the cooked shrimp from the pan. Add the garlic, onion and parsley and saute over a medium flame until lightly browned. Stir well to prevent burning. Add 2 tablespoons sweet butter, 2 teaspoons olive oil and 1/2 cup pasta water.

Simmer, reduce and taste. Add sea salt and pepper if needed.

Add the cooked pasta and shrimp. Stir well to coat with the sauce. Add small amounts of pasta water if more liquid is needed.  Toss well and serve with grated Parmesan.

Variations

Add 1/4 cup home made roasted tomato sauce to the saute.

Sprinkle 1/4 cup toasted bread crumbs on the pasta before adding the grated cheese.

Toss the pasta with 2 tablespoons finely chopped, crisp bacon.

Add 1/4 teaspoon pepper flakes for heat.

Saute 4 shiitake mushrooms, washed, thinly sliced with the garlic, onions and parsley.

Saute 1 cup corn kernels with the garlic, onions and parsley.

Instead of shrimp, use lobster or scallops.


Couscous or Bulgar Salad with Celery

Yield: 4 servings
Time: 20 minutes

Ingredients

1 cup instant couscous or fine grained bulgar
1 1/2 cups water
1/4 cup olive oil
1 celery stalk, washed, leaves removed, finely chopped
1 scallion, washed, ends trimmed, finely chopped
5 Italian parsley sprigs, leaves removed, washed, finely chopped
Sea salt and pepper

Method

Boil the water. Put the couscous or bulgar into a bowl, add the water, stir, drizzle with 1 tablespoon olive oil, cover with plastic wrap for 10 minutes.

Using a fork, fluff the couscous or bulgar, add the rest of the olive oil, season with sea salt and pepper to taste, toss with the celery, scallion, and parsley.

Serve at room temperature as a salad or a side dish.

Variations:

Add chopped raw tomatoes

Add Iranian cucumbers, washed, peeled, finely chopped

Add 1/4 cup finely chopped yellow onion

Couscous or Bulgar with Grilled Vegetables

Yield: 4 servings
Time: 20 minutes

Ingredients

1 large broccoli crown, washed, cut into 1" long slabs, 1/4" thick

Boil the water. Put the couscous or bulgar into a bowl, add the water, stir, drizzle with 1 tablespoon olive oil, cover with plastic wrap for 10 minutes.

Toss the carrots and broccoli pieces with olive oil, seasoned with sea salt and black pepper. Grill or roast in a 350 degree oven until lightly browned, about 15 minutes. Let cool and finely chop.

Using a fork, fluff the couscous or bulgar, add the rest of the olive oil, season with sea salt and pepper to taste, toss with the cut up carrots and broccoli.

Serve at room temperature as a salad or a side dish.

Variations:

Add 1/4 cup corn kernels, seasoned with olive oil, sea salt, and pepper, grilled or roasted

Add 1/4 cup olives, pitted, chopped

Add 1 cup spinach leaves, no stems, washed, roughly chopped



Egg Salad with Grilled Vegetables and Crisp Bacon

Crisp bacon bits adds another level of flavor and texture to egg salad. The bacon strips can be cooked first but better is to mince the raw bacon and saute the bits. That way, each bacon bit is nicely browned and holds a uniform shape.

Yield: 4 servings

Time: 45 minutes

Ingredients

4 farmers' market fresh large or extra large eggs
1 large carrot, washed, ends trimmed, peeled
1 ear of corn, tassels and husk removed, washed
1/2 cup Italian parsley leaves, washed, finely chopped
1 tablespoon capers, rinsed, finely chopped
2 strips of bacon, finely chopped, sauteed until crisp, drained
1 tablespoon finely chopped shallots or scallion
2 tablespoons mayonnaise
2 tablespoons olive oil
Sea salt and black pepper

Method

I like to put the eggs into a pot of cold water, turn the flame to medium-high, and cook them for 30 minutes. Many people say that's way too long but it works for me. The yolks come out flaky, the whites dense. Rinse with cold water, take off the shells, and roughly chop.

Slice the carrot into flat slabs about 1/4" thick and 3" long.  Toss in olive oil seasoned with sea salt and black pepper.  Do the same with the ear of corn.  Grill until lightly browned all over or oven roast in a 400 degree oven for 15 minutes. Turn frequently to avoid burning. Let cool.  Finely chop the carrots. Remove the kernels from the cobs.

In a large mixing bowl, combine the chopped eggs, carrots, corn kernels, parsley, shallots, and crisp bacon bits. Toss. Season with sea salt and black pepper.  Add the mayonnaise and mix well.

Serve on bread, crackers, or lettuce leaves.

Variations

Add 1/4 cup roasted red pepper, finely chopped

Omit the bacon

Add 1/4 cup finely chopped, pitted olives

Roast 2 garlic cloves, tossed in olive oil, seasoned with sea salt and pepper until lightly browned, peel off the skins, finely chop the soft garlic and add to the egg salad

Add a dash of tabasco or a dusting of cayenne pepper for heat


Open Face BLT with Avocado

Use any kind of bread you love. Personally I prefer thin sliced French or Italian bread for my open faced sandwiches. Depending on the size of the loaf, you will need two to six slices per person.

My favorite bread for a BLT is the Italian bread from Bay Cities Deli in Santa Monica. Light with a thin crust, the bread perfectly compliments the sandwich's toppings.

To keep its shape, the slices should be lightly toasted.

Serves 4

Time 30 minutes

Ingredients

8-24 slices of bread, lightly toasted
8-10 slices of bacon
2 ripe avocados, washed
4 ripe large tomatoes, washed, stem and blossom end removed
8 romaine leaves, ribs removed, or a handful of arugula leaves without the stems, washed, dried
8-16 slices of bread and butter pickles (optional)
Sea salt and black pepper
Mayonnaise

Directions

Set the lightly toasted slices of bread aside to cool.

In batches, cook the bacon in a large frying pan or griddle on a medium-low flame. Turn the slices frequently for even browning, being careful to cook through all the fatty pieces. Place paper towels on a plate. When each bacon strip is cooked, lay it on the paper towel to drain.

While cooking, pour off excess grease into a coffee tin for later disposal.

Cut the cooked bacon pieces so they are the same length as the toasted bread slices.

Depending on your preference, make thin or thick slices of tomatoes and set aside.

When you are ready to assemble the sandwiches, cut the avocados in half, remove the peel and discard the pit. Since the avocado flesh will discolor once it is exposed to the air, do this last step just before serving.

Spread mayonnaise on each slice of lightly toasted bread, place avocado slices on the bread, covering the surface. Lay romaine or arugula leaves on the bacon. Add a slice of tomato, pickle slices (optional) and lastly the bacon slices. Season with sea salt and freshly ground black pepper.

Serve with an ice cold beverage, a tossed salad and fresh fruit for dessert.

Variations

Lightly dust the avocado with cayenne for heat.

Instead of lettuce or arugula use watercress leaves for a peppery flavor.

Toss the avocado slices in a mix of 2 parts olive oil and 1 part fresh lemon juice before placing on the sandwich.

To make an open-faced melted cheese sandwich, lay thin slices of Irish or English cheddar cheese on top of the sandwich, place in a preheated, 350 degree toaster oven for 5 minutes to melt the cheese, 1 minute in a toaster oven set on broil and cook until the top of the cheese lightly browns. Serve warm.

Nice and Easy Spaghetti and Shrimp

A friend who is a good cook complains, "I'm too busy to cook. I get home from work and tell my family let's go out or order in."

Personally I feel the same way. I'm very happy when I open the refrigerator and see take out containers filled with Vietnamese lemon grass chicken, broken rice and bbq pork chops with pickled cabbage.

But sooner or later I hunger for a home cooked meal. I crave freshly prepared comfort food. Most of the time I don't want to spend a lot of time in the kitchen, so I want an easy to make meal. Salads are easy to make, but so are pastas.

At our farmers market, one of the vendors has a good supply of fish. Just recently he started carrying shelled, deveined shrimp, big fat ones. I bought a couple of pounds for an easy to make Sunday dinner. Sauteed and tossed with pasta, they are delicious.

Spaghetti and Shrimp

To build out the flavors, other ingredients can be added to this easy to make dish. Check out the variations below.

Yield: 4 servings

Time: 30 minutes

Ingredients

1 pound shrimp, washed, shelled and deveined
1 pound spaghetti
2 cloves garlic, peeled, finely chopped
2 tablespoons yellow onion, peeled, finely chopped
1/4 cup Italian parsley, washed, dried, leaves only, finely chopped
3 tablespoon sweet butter
2 tablespoons olive oil
1 teaspoon Kosher salt
1 cup pasta water
Sea salt and black pepper to taste
1/2 cup freshly grated Parmesan

Instructions

To help with timing the dish, make the pasta first.

Bring a gallon of water to boil in a large stock pot. Add kosher salt and pasta. Every five minutes use tongs to stir the pasta to keep it separated. Place a strainer in the sink along with a heat-proof cup to capture 1 cup of pasta water. In ten minutes or until the pasta is al dente (firm to the bite), strain the pasta and reserve the cup of pasta water.

Return the pasta to the still hot pot. Add 1 tablespoon sweet butter and 1 teaspoon olive oil, season with 1/4 teaspoon each, freshly ground black pepper and sea salt. Stir well with tongs. Lay a piece of aluminum foil over the top of the pot to help the pasta retain heat.

Leave the shrimp whole or cut into bite sized pieces. In a large chefs pan, heat 1 tablespoon olive oil and saute the shrimp until lightly pink. Remove the cooked shrimp from the pan. Add the garlic, onion and parsley and saute over a medium flame until lightly browned. Stir well to prevent burning. Add 2 tablespoons sweet butter, 2 teaspoons olive oil and 1/2 cup pasta water.

Simmer, reduce and taste. Add sea salt and pepper if needed.

Add the cooked pasta and shrimp. Stir well to coat with the sauce. Add small amounts of pasta water if more liquid is needed.  Toss well and serve with grated Parmesan.

Variations

Add 1/4 cup home made roasted tomato sauce to the saute.

Sprinkle 1/4 cup toasted bread crumbs on the pasta before adding the grated cheese.

Toss the pasta with 2 tablespoons finely chopped, crisp bacon.

Super Bowl Sunday Eats and Treats

Last year I wrote about celebrating my birthday on Super Bowl Sunday. We're doing the same thing this year and we'll be enjoying all the same treats.

My birthday isn't on Super Bowl Sunday, but it's close enough that every year I double-down and celebrate my birthday and football on the same day.

I didn't much care about the sport until our youngest son, Michael, taught me to love all things football. From the time he was 3 years old, he watched Sports Center and would grill me about which QB was the best--I didn't have a clue. He's off at UC Davis now and all that's different now. These days, my favorite TV show--with the exception of The Daily Show and The Colbert Report--is Showtime's Inside the NFL.

We've invited a dozen friends to come by the house and watch the game. I don't want to get stuck in the kitchen, so everything we're serving will be made the day ahead.

Only the Bacon Wrapped Shrimp appetizer has to be grilled on the day so the bacon is crisp and the shrimps are juicy. Just before kick-off, we'll reheat the wings and ribs and we'll be ready to watch what promises to be a great match up.

Bacon Wrapped Shrimp

You know the expression, "Bet you can't eat just one," well it applies to this appetizer. My son Franklin mastered this recipe when he was putting on feasts to entertain his college roommates. He taught me and I'm happy to pass it along to you.
Yield: 4 servings

Time: 30 minutes

Ingredients

1 pound shrimps (25-35 count/pound), washed, shelled, deveined
10-12 bacon strips
2 tablespoons olive oil
1/4 teaspoon sea salt
1/8 teaspoon freshly ground black pepper
1 garlic clove, peeled, finely chopped
1 shallot, peeled, finely chopped
2 tablespoons Italian parsley, washed, finely chopped
Toothpicks


Method

Heat the olive oil in a pan and season with sea salt and freshly ground black pepper. Sauté the finely chopped parsley, garlic, and shallot in the olive oil until lightly browned. Let cool. Spoon the seasoned olive oil over the shrimp. Toss well and let marinate for 30 minutes.

Organize an area on the counter so you can work assembly-line style.

Cut the strips of bacon into 3 equal pieces. Toss the shrimp again, then take one shrimp and lay it on the piece of bacon, rolling the bacon around the shrimp. Take a toothpick and push it through the bacon-shrimp-bacon to hold it together. Set aside and do the rest.

Using tongs, put the shrimp on a hot grill and close the hood. If you're using an oven, set it at 450 degrees and put the shrimp on a wire rack over a cookie sheet. Turn every 2-3 minutes so they cook evenly and don't burn, about 10 minutes.

Serve on a platter with napkins.

Carrot Salad with Lemon-Soaked Raisins

A great accompaniment for the ribs and wings, the salad also goes well with deli meats like turkey breast or ham or grilled steaks, chicken, or sausage. The lemon-pepper soaked raisins and the roasted nuts bring some surprises to a familiar side dish.

Yield 6-8 servings
Time 20 minutes

Ingredients

8 large carrots, preferably farmers' market fresh, washed, peeled, ends trimmed off
1 scallion, optional, finely chopped
1 small bunch Italian parsley, washed, dried, stems trimmed, finely chopped
2 tablespoons golden raisins
2 tablespoons lemon juice
1/2 teaspoon cumin
Pinch of cayenne
Sea salt and pepper
1/2 cup mayonnaise

Method

Soak the raisins in lemon juice and 1/4 teaspoon black pepper at least 30 minutes, preferably overnight Grate the carrots in a large mixing bowl. Roughly chop the raisins, reserving the lemon juice not absorbed into the raisins.

Mix together the carrots, raisins, parsley, and scallions. Season with the cumin, cayenne, sea salt, and black pepper and toss. Add the lemon juice and mayonnaise. Mix well.

Variations

Use cilantro instead of Italian parsley

Add 2 tablespoons capers

Top with 2 tablespoons roasted chopped almonds

Caesar Salad

The dressing can be made ahead and refrigerated for up to 2 days, then all you have to do before serving is tear up the lettuce, shake on some cheese, add the croutons and pour on the dressing. Perfect for a half-time snack.

Yield 4 servings

Time 30 minutes

Ingredients

1 garlic clove, skin off
1/4 teaspoon sea salt
4 anchovies
1 large egg, farmers' market fresh
1/4 teaspoon Worcester sauce
2 hearts of romaine or 1 large frisee, leaves washed
2-3 tablespoons olive oil, to taste
1 teaspoon lemon juice, freshly squeezed
2-3 drops Tabasco, optional
1/4 cup Parmesan or Romano cheese, freshly grated
1/2 cup croutons, homemade
Black pepper

Method

Use a wooden bowl if you have one. Sprinkle the sea salt on a wooden cutting board. Mash the garlic back and forth on the salt with the flat side of a chef's knife, then sweep the garlic-salt mash into the salad bowl.

Boil water in a small saucepan. Add the egg and cook for 4 minutes. Remove the egg, let cool, open, scoop out the yolk and white with a small spoon, and add to the salad bowl along with the Worcester sauce, optional Tabasco, olive oil, and lemon juice.

Using a fork, mash the anchovies against the side of the salad bowl so they dissolve in the dressing. Mix well.

Tear the romaine leaves into pieces or chop up the frisee, add to the salad bowl, top with grated cheese, croutons, and season with pepper. Toss to coat the leaves.

Taste and adjust the flavors by adding more lemon juice or sea salt.

Variations

Add 1/2 pound grilled, shelled, deveined shrimp, whole or roughly chopped

Add 2 chicken breasts, skinless, grilled, thin sliced

Add 1 ripe avocado, peeled, pitted, roughly chopped

Brown Sugar Pork Ribs

The cooked ribs can be kept in the refrigerator covered 2-3 days or frozen in an air-tight freezer bag.
Yield 4 servings

Time Prep (20 minutes) Marinate (overnight) Cook (2 hours)

Ingredients

1 rack pork ribs
2-3 cups brown sugar
1/4 cup kosher salt
1/2 teaspoon cayenne
Olive oil
Black pepper
6 ounces Italian tomato paste
1 small yellow onion, peeled, finely chopped
2 garlic cloves, peeled, finely chopped

Method

Trim excess fat, the membrane, and flap from the ribs. Caprial Pence the owner-chef of Caprial's Bistro in Portland, Oregon and a fellow contributor to Eat Drink or Die shows how to prep the ribs with easy-to-follow photographs. Reserve the flap, trimmed of its membrane, to grill for tacos.

Spread a piece of plastic wrap on the counter 5” longer than the rack. Dust the meat side of the ribs with the cayenne.

Mix together the brown sugar and kosher salt. Spread half the dry mix on the plastic wrap. Lay the ribs on top, then cover with the rest of the dry mix. Cover with a second piece of plastic wrap, seal, fold in half and place into a Ziploc or plastic bag. Refrigerate in a pan overnight.

In the morning remove the ribs. The dry mix will have transformed into a slurry. Very alchemical! In a sauce pan sauté the onions and garlic with olive oil until lightly browned, season with pepper. Remove the ribs from the plastic bag. Use a rubber spatula to remove most of the liquid from the ribs and plastic bag and transfer to the sauce pan. Add the tomato paste and simmer the sauce on a low flame for 20 minutes. Taste and adjust the flavor if necessary.

Line a large baking tray with tin foil. Place a wire rack on top of the baking tray, then lay the ribs on the rack. The ribs can either be cooked in a 350 degree oven or on the “cold” side of a covered grill with the heat on high.

Whether on the grill or in the oven, cook the ribs 30 minutes on each side, then baste the ribs with the sauce and cook another 30 minutes on each side or until done. Remove from the oven, cut apart the individual ribs, and serve.

Kimchi Chicken Wings

The natural partnership of kimchi and brown sugar brings a sweet-heat to these finger lickin' good wings.

Yield 4 servings

Time Marinate overnight. Cook approximately 60 minutes

Ingredients

2 1/2 pounds chicken wings, washed, pat dried
2 tablespoons brown sugar
1/2 cup kimchi, finely chopped
1 tablespoon kimchi water from the bottle
1 tablespoon olive oil
1 small onion, washed, peeled, sliced thin
2 tablespoons soy sauce

Method

Dissolve the brown sugar in the kimchi water, olive oil, and soy sauce. Add the kimchi, onion slices, and chicken wings. Mix well, cover, and refrigerate overnight.

Preheat the oven to 350 degrees. Line a baking tray with tin foil for easy clean up. Place a wire rack on the tray and arrange the wings on the rack. Drizzle the wings with olive oil. Put into the oven and bake 30 minutes. Turn over with tongs. Bake another 30 minutes.

The wings should be tender and golden brown. If not, turn the wings over and continue baking another 10 minutes.

Check again and continue baking at 10 minute intervals, turning the wings each time, until they are done.

In a small saucepan on a low flame, reduce the marinade by a third. Reserve.

The wings should be eaten hot. Pour the heated, reduced marinade over the wings just before serving.

Serve with plenty of napkins and ice cold drinks.

Variations

Add 1 tablespoon julienned garlic and 1/4 cup finely chopped Italian parsley to the marinade
Just before serving, top with 1 teaspoon toasted sesame seeds and 1 tablespoon thinly sliced scallion

Banana Cake with Chocolate Chips and Walnuts

Now it's time for something sweet. The cake is best served warm, topped with powdered sugar and grated dark chocolate. Ice cream and whipped cream are good too.

Yield 8-10 servings

Time 90 minutes

Ingredients

4 ripe bananas
1 1/2 tablespoons baking soda
1/4 teaspoon pure vanilla extract
2 eggs
1 cup plus 1 tablespoon sweet butter, room temperature
1 cup white sugar
1/2 cup brown sugar
2/3 cup half and half or 1 cup heavy cream
2 1/2 cups white flour
Pinch of sea salt
Pinch of cayenne
1/2 cup raw walnuts
1 cup semi-sweet chocolate chips

Method

Melt 1 tablespoon of butter and paint the inside of a 9 x 3 round cake pan, then put the pan in the freezer for 30 minutes. The frozen butter prevents the batter from sticking to the pan.

Bake the walnuts on a cookie sheet in a 350 degree oven for 30 minutes, turning every 10 minutes. Let cool, roughly chop, and set aside.

In a bowl mash the bananas with a fork, add the baking soda and vanilla. stir well and set aside. In a mixer use the whisk to cream together the softened butter and both sugars. Add the eggs, mashed bananas, half and half (or cream) and whisk until blended. Mix in the flour half a cup at a time, being careful not to over-beat.

Remove the bowl from the mixer. Use a rubber spatula to blend in the walnuts and chocolate chips. Pour the batter into the buttered cake pan. It will only fill the pan half-way, which is good because the cake will rise.

Bake the cake in a 350 degree oven for 60-70 minutes, turning the pan every 20 minutes so the cake cooks evenly. Test to see if the cake is done by inserting a wooden skewer. If the top is browning too quickly, lightly lay a sheet of aluminum foil over the top. When the skewer comes out clean, take the cake out of the oven and place on a wire rack for 30 minutes.

Remove the cake from the pan, putting it back on the wire rack to finish cooling.

Just before serving, dust the top with powdered sugar and shaved chocolate. Serve warm or at room temperature.
