Fourth of July is Back! Time to Picnic. Time to Pickle

Rockets exploding overhead. Sparklers in the darkness. Time to celebrate Independence Day. Time to gather together.

Last year we couldn't. This year we can. An amazing triumph of human will and science over a deadly disease. Thank you to all those who labored to care for us and those who created a way forward.

This year for us in Pacific Palisades, we will celebrate the past and our future with a picnic on the grass facing the high school. We'll have a pot luck dinner, see one another in person and catch up.

I'll make fried chicken a chef taught me in his kitchen and potato salad I learned from my mother. And, I will bring pickles made not with cukes but with elegantly long Persian cucumbers. For me, this is a newly modified recipe, midway between a classic Jewish dill pickle and Moroccan pickled vegetables.


Ready to eat after a day for a crisp pickle or in a week or two for a more mellow pickle-experience.

Pickles

No doubt the people who made the first pickles thought they had made a mistake. Somebody accidentally forgot about some raw vegetables in a pot with an acid and salt. Surprise, surprise. A week later, the vegetables weren’t moldy, no bugs had eaten them and, deliciously, they had a nice crunch and tang. Thus was born, the pickle!

In the 1920s, my great-grandfather made pickles on the Lower East Side of Manhattan. Grandmother Caroline used to tell stories about working in their little grocery store as a child. When customers would want pickles, she would hop off the counter and go out front to the pickle barrels and fish out the ones they wanted.

I never knew her parents. I never ate their pickles, but I must have brine in my veins because wherever I travel, I am always on the look out for pickles.

Persian Cucumber, Carrot, Onion and Daikon Pickles

As with with things in life, the better the ingredients, the better the result. Use the best vegetables, you'll make a better pickle. Choose Persian cucumbers that are firm, unblemished, without any soft areas. Use carrots that have a sweet taste, the better to contrast with the vinegar and salt. 

For pickled onions, slice yellow onions the long way (from root to stem) into thin strips or buy Mexican onions that look like mature scallions with fat bulbs. Whole onions take a week to pickle. Onion strips pickle in a day.

Daikon pickles are a delight. Crisp and clean tasting.

Vinegar makes a difference. White, red, yellow, there are many different types of vinegars with as many results. I use white wine vinegar I find in Persian and Armenian grocery stores that is less acidic than white vinegar and doesn't color the vegetables as would red wine vinegar. For these pickles I don't use Japanese rice wine vinegar, but I think it would work as well.

Choose a glass jar tall enough for the Persian cucumbers to stand up. Wash the glass jar in a dish washer or with hot water and soap before using.

How much brine you need depends on the size of the jar. All the vegetables must be submerged in brine to avoid spoiling. Make extra brine to keep in a separate container. As vegetables are removed, add brine to cover. 

Only use Diamond Crystal Kosher Salt. Other kosher salts contain additives.

Before adding the brine to the vegetables, taste and adjust. You might like less salt or more vinegar than I do. 

Prep: 15 minutes

Serves: 6

Pickling Ingredients:

6 Persian cucumbers, washed, stems removed

2 large carrots, washed, ends trimmed, peeled, cut into 1 1/2" fat sticks

1 small daikon, washed, ends trimmed, peeled, cut into 1 1/2" fat sticks

1 small yellow onions, washed, ends trimmed, peeled, sliced thin from stem to root

Brine Ingredients - Adjust proportionally to the size of the glass jar

1 1/2 tablespoons Diamond Crystal Kosher Salt 

1/2 cup Yellow White Wine Persian Vinegar or Japanese Rice Wine Vinegar

2 cups water

1 teaspoon black pepper corns

1/2 teaspoon mustard seeds

A pinch hot pepper flakes

3 bay leaves

Directions:

Lay the glass jar on its side. 

Slide cucumbers into jar so they will stand up when the jar is placed upright. 

Add other vegetables.

Add aromatics.

Stir brine well and add until vegetables are completely submerged. Make certain you keep 1 cup of brine in a separate container to add later as the liquid level drops when you remove vegetables.

The Best Egg Salad You Will Ever Make

My mother and grandmother disagreed about many things as mothers and daughters do. They especially disagreed about the proper way to make egg salad.

Real egg salad, my grandmother said, was made with hardboiled eggs and mayonnaise with a little salt and pepper. My mother used those ingredients as a starting point. To her egg salad she added finely chopped celery and, sometimes, scallions. My grandmother thoroughly disapproved.
As a kid, I often found myself caught between the two of them. Siding one time with my mother, another time with my grandmother.

About egg salad, I definitely agreed with my mother. Chopped hardboiled eggs and mayonnaise cried out for more flavor and texture. The celery and scallions were a good start but, ultimately, I decided there were so many more ingredients that would improve egg salad why not add whatever you wanted, as long as the ingredients did not over power the eggs.

I tried lots of ingredients. Mango chutney (not good), raisins (not good), pitted green olives (very good) and pepperocini (very good) to name a few.
Right now I'm happy with adding charred carrots, onions and corn kernels tossed with fresh Italian parsley. The crunch of carrots and corn contrasts with the soft, creamy eggs and mayo. Italian parsley adds a fresh element. A dusting of cayenne or Korean pepper flakes adds a pleasing heat.

For special occasions, I also like to mix in chopped up charred shrimp, crab or lobster. Using a carbon steel or cast iron pan makes charring the vegetables very easy.

I'm pretty certain my mom would approve. I am as certain, my grandmother would not.

The Best Egg Salad

Yield: 4

Time to prepare: 20 minutes

Ingredients

4 eggs, farm fresh, large or extra large
1/2 cup corn kernels, about 1 ear of corn
1 medium carrot, washed, peeled, ends removed, small diced
1 small yellow onion, washed, peeled, ends removed, small diced
1 small bunch Italian parsley, washed, dried, stems removed, finely chopped
2 tablespoons mayonnaise, preferably Best Foods
1 tablespoon kosher salt
1 tablespoon blended oil (70% canola oil, 30% olive oil)
Sea salt to taste
Black pepper, freshly ground, to taste
Pinch cayenne (optional)

Directions

Put kosher salt into quart sized pot filled with water.
Place eggs into water. Put flame onto medium-high.

After water boils, leave eggs in uncovered pot 5 minutes, then turn off heat and cover for 10 minutes.

Remove cover, pour out hot salted water and fill pot with cold water. Allow eggs to cool.

Peel eggs and reserve.
Place carbon steel or cast iron pan on a high heat. When metal smokes, add blended oil and vegetables. Stir frequently to prevent burning. Cook until vegetables are charred. Remove from stove and cool.

Finely chop hardboiled eggs and place into large bowl.

Add cooled charred vegetables and mix well.
Season with sea salt, freshly ground pepper and cayenne (optional). Taste and adjust seasoning.
Add Italian parsley. Mix well.
Add mayonnaise. Mix well. Refrigerate.

Serve with crackers, bread or romaine leaves.

Vegan Happiness

A few years ago my wife read the funny and subversive vegan anthem, Skinny Bitch. Overnight she became a pescaterian. Gone were the chicken wings and steak bones she used to gnaw on with great pleasure. Gone too were the sausages, bacon and ribs that were part of her diet. Overnight I lost my culinary-companion.

Since I'm a stay-home-writer (except when I'm traveling), I cook most of our meals. That means cooking twice. One meal for me (brown sugar ribs, grilled sausage, braised beef, Moroccan preserved lemon chicken) and another for Michelle (tofu with sautéed spinach and shiitake mushrooms, spring vegetable soup, grilled vegetable chopped salad).

Her change in diet caused me to change the way I cooked. Not having animal products to thicken sauces and add layers of flavor hobbled my cooking. Then I discovered three beautifully easy-to-prepare flavor enhancers that are inexpensive and totally vegan. Also, they do not use any oil.

Reduced Balsamic Syrup

When balsamic vinegar is heated over a low flame, water evaporates, leaving behind a dark, flavorful liquid. Amazingly, the vinegar's lip-smacking tartness is transformed into sweetness that retains a touch of acid. The thickened, reduced vinegar tastes very much like expensive, aged balsamic vinegar that sells for as much as $40.00 a pint. 
Use the least expensive balsamic vinegar available. The restaurant supply company, Smart & Final, sells a gallon of Italian balsamic vinegar for $20.00. That one gallon yields a quart of reduced balsamic which in turn will last months.

To make the reduction, use the ratio of 4:1. Four parts of vinegar will yield one part of the reduced liquid. 1 cup of vinegar will produce 1/4 cup of syrup, which will make enough salad dressing for four meals.

The key to the reduction is low heat. Overheating creates a harsh flavor. Allow only a few, occasional small bubbles to appear on the surface of the liquid. As the balsamic reduces, lower the flame.

I reduce a gallon at a time to create 4 eight ounce squeeze bottles. That amount lasts us months. To reduce that much liquid using a low flame can take six to eight hours.

You can make a smaller amount in a few minutes. Just keep in mind the ratio of 4:1 and a low flame.

Onion Jam

All vegetables give off their water when exposed to heat. Cooked over a low flame, thin sliced onions give off a milky liquid that adds to their sweet caramelization. Traditionally onions are sautéed in olive oil to prepare them for soups and stews. To avoid using olive oil simply use a low flame and stir continuously to prevent the onions from sticking to the bottom of the pot.

The onion jam can be refrigerated in airtight containers for a week or frozen for a month. Used as a base to make pasta sauces, soups or braises, the onions add a depth of flavor and sweetness.

In the Basque region of Spain, where pintxos, open faced sandwiches, are popular, room temperature onion jam is spread on grilled bread as the base for imaginative toppings that include charred red and green peppers, fresh wild arugula and quick fried thin strands of green cabbage.

Serves 8
Ingredients

2 pounds yellow onions, washed, ends and skin removed
Sea salt and ground pepper

Directions

Thinly slice the onions the long way, from stem to root. Heat a large pot over a low flame. Add the onions. Season with sea salt and pepper.

Stir frequently with a wooden spoon. Because the onions render slowly, it is helpful to have other things to do in the kitchen. As the onions cook, they give off their liquid. Stir the onions around in the liquid to coat.
In time, the onions will turn golden brown. The longer you cook them, the darker they will get. I like them light brown although some people enjoy the jam when the onions take on a rich, dark brown color. Taste and decide which you like.

Remove from the heat. Let cool and use or refrigerate.

Tomato Essence

Delicious any time of their season, ripe tomatoes are one of nature's wonders. Eaten fresh from the garden, few vegetables can compare with the rich flavor of a summer ripened tomato. For a cook wanting to avoid using oils and for anyone who wants to steer clear of commercially processed food, tomatoes are a great blessing.

With very little effort, roasted tomatoes give up a delicious liquid that can be used as the basis for a salad dressing, soups, pasta sauce and braised dishes.
The technique is the essence of simplicity: turn on the oven, put in the tomatoes, come back in an hour, they're ready to use. To create tomato essence, use a wire mesh strainer or, better yet, a food mill which will separate the solids from the liquids.

It's that easy.
Serves 8

Ingredients

4 pounds ripe, farmers market tomatoes, washed, stems removed

Directions

Preheat the oven to 450 F.

Place the whole tomatoes on a baking sheet lined with nonstick parchment or a Silpat sheet (available in most supermarkets and specialty stores like Sur Le Table or William Sonoma).

Bake one hour or until the tomatoes begin to sag.  Remove and let cool.
There are two liquids available at this point. A clear, light liquid, perfect to make a salad dressing and a thicker liquid with pulp that is a delicious basis for soups, pasta sauces and braised dishes.

To create the first lighter liquid, place the tomatoes in the strainer or food mill over a non-reactive bowl and gently press down. That will release the clear or lighter liquid. Remove, cover and refrigerate.

Place the bowl back under the strainer or food mill and vigorously press the tomatoes until all the liquid and pulp have passed through leaving only the skin and seeds behind.

Remove, cover and refrigerate.

Tomato Essence Salad Dressing
Serves 4

Ingredients

1/4 cup first pressing tomato essence
1 tablespoon reduced balsamic syrup
Sea salt and black pepper

Directions

Substitute the tomato essence for olive oil and mix well with reduced balsamic syrup. Season with sea salt and black pepper.

California Dreamin: A Salad of Iranian Cucumbers, Cherry Tomatoes, and Onions

Living near the beach in Pacific Palisades, I have to drive a long way to visit one of my favorite places to eat. An Armenian restaurant, California Dreamin (6424 San Fernando Road, Glendale, CA 91201) is located in Glendale some 30 miles inland. Happily a block away is another favorite, Golden Farms (6501 San Fernando Road, Glendale, CA 91202), also Armenian, a supermarket famous for its low prices, fresh produce, specialty cuts of meats, and enormous liquor department.

Reflecting the diversity of the neighborhood, California Dreamin is an all-purpose coffee shop serving American, Mexican, Japanese, Middle Eastern, and Armenian food. I imagine it was once a hamburger joint or the kind of coffee shop that served 99¢ breakfasts.

For years I drove by without stopping. Now I look for excuses to swing by and have lunch.

I'm certain all their food is good but I'm a creature of habit so I always order #8 the Chicken Breast Kabob. The perfectly cooked chicken is tender and juicy. Served with basmati rice, a fire-roasted whole tomato and a pepper, toasted pieces of lavash, and a small bowl of cucumber salad, there's always more than I can eat. Invariably I bring home a to-go box for a late night snack. And they make a cup of thick Armenian coffee that packs more flavor than any espresso.

At some point, I realized I came as much for the cucumber-tomato salad (Salad-e Shirazi) as anything else. The combination of flavors is so deceptively simple. Making the salad at home I shop at the local farmers' markets to get the freshest ingredients. Delicious by itself, the salad is a perfect side dish for grilled meats.

Iranian Cucumber, Tomato, Onion Salad

Yield: 4 servings

Time: 5 minutes

I tried using regular cucumbers but they're too watery. For me the salad only works with Iranian or Persian cucumbers because they have more density and fewer seeds. The traditional version of the salad calls for the addition of an acid, either vinegar or citrus juice (lemon or lime). Personally, I like it without either, but all versions are worth trying.

Ingredients

2 Iranian cucumbers, washed, peeled, thinly sliced into rounds or quarters
1/2 basket cherry tomatoes, washed, quartered
2 tablespoons yellow onion, washed, peeled, cut into small pieces
2 tablespoons olive oil
Sea salt and pepper

Method

Mix together and dress with olive oil. Season to taste with sea salt and black pepper.

Serve as a side dish with grilled meats or to be eaten with grilled lavash or tortillas.

Variations

Add a squeeze of fresh lemon or lime juice, or 1 teaspoon vinegar.

Add finely chopped Italian parsley or cilantro or mint leaves.
